  • Chanar payesh is a popular Bengali sweet dish that is made with chana or soft cottage cheese cooked in sweetened milk. This Holi, treat your loved ones with this yummy chanar payesh. So lets get started.
    • Take a litre of milk and bring it to boil. Remove from flame and add 1 lemon juice.
    • Give a quick stir and let the milk curdle. Removing from the flame will help you get soft chana.
    • Keep it aside and after 15 - 20 minutes strain the chana.
    • Now add water and wash the chana to remove the sourness from it.
    • This step is compulsory as lemon juice present in the chana may curdle the milk later on while preparing the sweet dish.
    • Now squeeze the extra water lightly and keep the chana aside.
    • In the meantime, take 1 litre of milk and reduce it to half while stirring it continuously. take a thick bottomed pan to do this as milk might burn at the bottom of the pan.
    • Once it is reduced to half add 1 tsp of cardamom powder. Now add 1 tsp of rose essence. This is completely optional. If you don’t want to add any extra essence then you can skip this step.
    • Now add ½ cup of sugar to the milk and stir well so that the sugar melts easily. Now add the chana kept aside and mix well. Let it cook for 5 mins and then switch off the gas. Let it cool for some time.
    • Take a pan and add ½ tsp of ghee and add some cashew and raisins and fry for a minute.
    • Add the dry fruits to the payesh. You can garnish it with some pistas also.
    • Keep it in the refrigerator for an hour and serve it to your guests.
