    Yield of Recipe : 320 to 340g
    Prep. & Cooking time :- 15 - 20 minutes
    Setting Time :- 5 to 6 Hours

    INGREDIENTS
    Milk (Raw) - 2 liters (Cow/ buffalo)
    Lemon juice/ vinegar - 5 to 6 tbsp
    FOR MAKING PROCESSED CHEESE :-
    Fresh cheese - 240 g (from 2 liters milk)
    Citric Acid - 1 tsp (5g)
    Baking Soda - 1 tsp (5g)
    Water - 1 tbsp
    Salted Butter - 1/4 cup (50g)
    Milk (Boiled)- 1/3 cup (80 ml)
    Salt - 1/4 tsp or as per taste
    ------------
    Instructions:
    1. Gently warm the milk in a pot over low heat, stirring consistently. Aim for a temperature between 45 to 50 degrees Celsius, or until it's lukewarm. Turn off the heat and gradually add vinegar or lemon juice while stirring, until the milk curdles and separates into solids and whey.
    2. Strain the curdled milk to remove excess whey, squeezing out as much liquid as possible.
    3. Mix citric acid and water in a bowl, then add baking soda to create a clear sodium citrate solution.
    4. Blend the strained cheese, sodium citrate solution, butter, milk, and salt in a blender until smooth.
    5. Transfer the cheese mixture to a heatproof bowl and double boil it for 5 to 8 minutes.
    6. Grease a plastic mold with butter.
    7. Pour the blended mixture into the greased mold and let it cool at room temperature before placing it in the refrigerator for about 5 to 6 hours to set.

      @@Gameplay-879 I made it out of 2 litres of non pasteurised full fat milk. The yield was approximately 250 - 300 grams. Not too sure, though.

      @@HannahS127Yes you can make cheese from expired milk. Plenty of videos on youtube showing it. Of course "expired" doesn't mean that you can use milk that's so rancid that you would feel like throwing up by just smelling it.

    I did the same process without the citric acid and baking soda and added a bit more milk, as I wanted more like a spread cheese instead of processed type. It came out DELICIOUS ❤ tky so much for this video, I finally have a creamy spread like a camembert cheese that tastes way better 🫶

    If you gently re-heat the whey (the liquid left after removing the cheese), to just boiling point, you will get ricotta cheese. Keep stirring the whey as you heat it, very gently, and as soon as you see a white foam appear on the surface stop mixing, keep the heat very low, and watch as your ricotta cheese rises to the top of the whey. It will make a thick layer, as soon one bubble bursts through the top, turn off immediately and leave to rest a few minutes. Use a ladle ( the kind with holes in), to scoop the ricotta, let the liquid drain back into the pan through the ladle, then set the ricotta into a seive over an empty bowl the catch excess liquid. Leave it to drain well and cool. There you have your fresh ricotta cheese!

      Yes, it did work. It tasted almost like store bought Amul or Britannia cheese, with very little hint of paneer's taste.

      its just about temperature.... at low heated temperature.. adding vinegar/lemon juice gives out smooth cheese... and if at high temperature/boiled miled.. adding vinegar/nimbu juice gives paneer.. rough dehydrated cheese..
      also if instead of vinegar/nimbu juice... rennet is added in a low heated milk.. it gives mozzarella cheese

    Yesterday I made this..I didn't have citric acid and butter.. instead I used lemon juice and ghee ... I used the cheese in my roti stuffed with onion and Bell pepper.. it was damn good.. it smelled like amul cheese ..there was cheese pull as well... this recipe is bomb.. I was trying to make processed cheese at home for 2 to 3 years... finally I succeeded.. thank you for this wonderful recipe...

      @@td7761 not much.. for 500 ml milk you'll need 1 to 2 table spoon... and 2 pinch of baking soda... I did not measured everything.. I was just curious so tried which is available to me and the measurements were rough..no hard and fast rule...

    WOW thanks a million MY LOCKDOWN......this recipe is great...cheese is so expensive in our country....this is a wonderful idea to enjoy cheese so fresh and tasty....I always think of making Pizza, but the shortage of cheese always pushed me back...you are so sweet to let so many like me to enjoy cheese at a cheaper budget and safe from old cheese food poisoning...without long, long shef life in supermarkets

    I made this cheese at home and it came out AMAZING. It has a soft consistency, a little softer than Amul cheese and tastes a little like cheese triangles available in the market. Thank you so much for this amazing and simple recipe! It is very detailed and it helped me get my cheese right in the very first try. To anyone making this cheese at home, just a TIP, add a little more salt than recommended, otherwise the recipe is perfect🥰

      @@teefsister637 I think you will need to use baking soda for the correct chemical reaction. Ghee is basically clarified butter. If ghee is not available you can use butter.

      ‎ملعقة صغيرة من حامض الستريك (إذا لم يكن متاحًا ، استخدم 1-2 ملاعق كبيرة من الليمون بدلاً)
      ‎ملعقة صغيرة من صودا الخبز
      ‎ملعقة كبيرة ماء
      ‎1/4 كوب الزبدة المملحة (50 جرام)
      ‎1/3 كوب حليب (80 مل)
      ‎ربع ملعقة صغيرة ملح أو حسب الذوق
      1. سخني الحليب على درجة حرارة منخفضة وقلبيه كثيرًا. عندما تصل إلى درجة حرارة دافئة عند اللمس ، أو عندما تصل إلى 45-50 درجة ، أغلق النار. أضيف عصير الليمون أو الخل ببطء إلى الحليب. قلب حتى يتخثر الحليب
      2. ثم اتركه يرتاح لمدة 2-3 دقائق.
      3. قم بتصفية الجبن ، وتأكد من عدم وجود سائل متبقي. يجب أن يتبقى حوالي 240 جرامًا من الجبن.
      4. قلّب حامض الستريك (أو عصير الليمون) والماء معًا جيدًا. ثم أضيف صودا الخبز وانتظر حتى يصبح المزيج صافياً. يسمى هذا الخليط سترات الصوديوم.
      5. نضيف الجبن ومزيج سترات الصوديوم والزبدة وثلث كوب من الحليب والملح في الخلاط. امزجها حتى تصبح ناعمة.
      6. أضيف هذا المزيج في وعاء مقاوم للحرارة ، وضع هذا الوعاء فوق قدر من الماء المغلي.
      7. قلب لمدة 5-8 دقائق
      8. نضع المزيج في وعاء مدهون بالزبدة أو السمن ، ونتركه ليبرد حتى يصل إلى درجة حرارة الغرفة. ثم برد لمدة 5-6 ساعات.

    Hi everyone, one fact you must understand that recipe is mixer of specific secret ingredients, it's not always that we can replace one ingredient with other, that way the recipe will loose its originality.
    Our recipe is how to make processed*** Cheese
    *** Processed cheese is made from cheese and other dairy ingredients mixed with emulsifiers**. Additional ingredients, such as butter, salt, milk, or sugar may be included. As a result, many flavors and textures of processed cheese exist.
    **emulsifier --Sodium citrate solution(which we prepared here) allows the proteins in the cheese to become more soluble while lowering the pH of the cheese which creates a smooth emulsion without curdling , stabilize the cheese and improves the quality.
    I have made lots of efforts and studied hard to have this recipe. Experimented several times to get this perfect Processed Cheese recipe. There is no substitute of Citric Acid (नींबु का सत / Tatri) in this recipe, although you can use Vinegar in place of lime juice while making Cheese and Ghee in place of butter. Please understand if you are experimenting by your own with alternates then you may not get desired results.
