If I remember correctly items in The Sims 1 don't start depreciating in value until 24 hours after purchase. So if you really wanted to micromanage your finance you could buy/sell whatever furniture you needed to fulfill a specific motive and then immediately sell it to fulfill another motive with something else. (3:28 is a toaster oven!)
The microwave cannot catch fire but the cheaper toaster oven that looks almost identical can. I remember it being mentioned in the Prima strategy guide. Conclusion: the type of fridge and Cooking skill have a relatively small impact on food quality compared to the food processor and stove. Sims only need 2 Cooking skill to prevent fires (this is also stated in the Prima guide), so the way to get the best value when starting out is to immediately get all your Sims to 2 Cooking, and use the cheap fridge with a food processor and the most expensive stove you can afford (with the Pyrotorre stove this gives a food quality level of 92, only 19 less than the base game maximum of 111).
