    Looks great! People worrying about what other folks cook on don’t even deserve the time you gave them, but it’s cool how you reiterate the Meat Church mission and explain everything so well! You’ve definitely inspired me to get out and cook more than I used to.

      it's all about the food and knowing proper technique, the rest is just minor details. give me the best quality professional grill or give me a plate of scrap metal and a campfire, the results will be the same in the end.

    Matt- Great video!! I learned a little tip form a Chef friend, after you grill your bun place it on top of the chicken/cheese on the grill. Then take the spatula and flip your cheesesteak (allowing the cheese to stick to the bun helping to keep it from getting soggy). Best Cheesesteak ever!!

    Love the the after the cook segments! It lets us hear what you would change or do a little different after you have had time to review it and get your staffs feedback. …..     "Be better." Amen, Brother. One of my go to grills at my shop is a tiny Walmart Weber knockoff I picked up for under $20. And I've turned out some incredible BBQ on that thing. So, stop hating, haters. Just cook and be happy.

I am a fan of your seasonings - and Malcolm Reed, Heath Riles, Kinder's, Lane's and many more. As another of my favorite you tube cooking shows says, "don't make the same thing the same way all the time" (STCG). Have fun, life is short.     Totally agree with your comments in the follow-up section of the video. I love Traeger products because they work for me, but would never dish someone else for using something different. You're trying to get people to cook differently and that's all. For me an offset smoker would never work for my life, but that doesn't stop me from making great food for my family and friends. Good on you for telling us straight up to be better. We need that reminder every once in a while. Thanks for your entertaining work and inspiring me to do new things and all your products you sell. I've for sure leveled up because of what you do. Keep it up.

    Dude YES! So tired of seeing people talk about what others cook on. I have a Traeger and I love it because my family loves the food I make on it and it allows me to spend time with them versus standing around the grill. My ego could care less how much work I had to put in. Love the vids Matt. Really love the seasonings!

    Personal opinion: Folks get too hung up on the gear, whether we are talking about outdoor cooking, hunting, fishing, shooting, video games, ect. None of it matters. In this case it's the food and the technique that matters. As you stated in the video this can be done in a cast iron skillet on a stove so the griddle is a moot point, just how you have chosen to present this information too us. I agree wholeheartedly that we as people need to do better and everyday is an opportunity to make that effort. I have really enjoyed the videos I have seen and I have a lot to catch up on. Keep up the great work sir and God Bless you and your family.

    I love many things about this video. I love the fun facts about the team that this Cowboys fan loves to hate the most. I love the whole paycheck reference. And lastly, I love the cheesesteak sandwich. Man I need to get a griddle. These griddle recipes would be quick and easy meals to make for my family of 6 and the homeless that I serve. Thanks for all the different kinds of cooks. Lastly, keep on doing you man. I ain't mad at that! Oh and if you felt like just gifting me a griddle, I wouldn't be mad at that either...lol.

    Great vid!! Love the last part as I had not seen this on other videos. I am right there with you on its all about getting ppl together and enjoying the food and friendship. Never could understand the negative comments no matter where we are. Just enjoy what we are so blessed to have in this amazing country and our freedoms. I am in North Central Montana and since I don't have a proper area to cook outside when the weather (mostly due to the high winds problems) is like it is I really miss the cooking and ppl gathering. Spring is on the way so will be getting more cooking going on then.

    I agree, cook on what you like. Just get out there and have fun. The only thing I was thinking is to let the chicken char a bit before breaking it up and browning it. I saw this on another TH-cam video years ago (can't remember where) They said to set the slab of ground Turkey or Chicken on the grill (or pan) and let it char a bit before you break it up and finish cooking it. I tried it and it gave the meat more flavor. They said this trick is good for those that are not big ground turkey or chicken fans. I char mine on both sides like a giant hamburger. Get a nice crust on it then break it up. It really kicks it up a notch. Of course, you may have a different way you like yours and that is completely OK. Thanks Matt you videos are awesome.

    Well I am glad I stuck around to the end to see the wrap up notes. I am from Australia and didn't get any of the jokes, but it is just a bit of fun - we all do that over here for sure, a bit of healthy ribbing! As for the hating on brands etc, one of the things I love about you and your content is that you have NEVER pushed me into using anything that you demonstrate. You usually always say it's about time and temperature, and I have heard you say on many occasions - use a frypan if you want, but outdoors is always more fun and tastes better. You are a good man Matt - keep doing what you are doing! Cheers mate.

    Love that fact that you shot down the hater’s that focus on what you’re cooking on instead of the great food that you’re making. It’s fire, heat and technique that cooks the food not the brand name. One of my favorite things to cook on is my old Walmart Expert Grill charcoal grill and let me tell you I can turn out some good eats on it. Mainly from getting great ideas from you.

    That bun oiler thingy blew my mind. So cool.
    Also, fans in philly are the surliest bunch of goons out there, so much that it's actually charming. Some things I've seen in Philly: a rich old lady, wasted on wine, barfing on the floor of the train station and refusing to clean it up; also a naked guy staggering around on top of a pile of trash.

    Loved the commentary at the end. I’m a Camp Chef guy. All my cookers are CC. I don’t hate on Traeger. I’m sure they are fantastic as well. I’m also a massive Meat Church guy. Seems like my favorites end up being MC. Holy Cow, Honey Hog, and Texas Sugar are staples in my arsenal and always will be. Sure, there are other rubs and seasonings that I absolutely love, but when I try new things, I find myself comparing them to these three. Love the videos and love the food! Thank you!

    I love your disclaimer and honesty on brands with which you cook. Griddle is indifferent. I sincerely appreciate your approach and honesty. Rare in today’s world. Sometimes I use Meat Church rubs, but mostly keep it simple. That’s for keeping it real!!

    Came across ur channel looking for a good beer can chicken recipe a couple weeks ago. I've now done ur Texas chili x2, burnt ends, smoked meat loaf, brisket and I still haven't done the chicken yet i originally was looking for. I'll get there eventually.     I ate hundreds of cheesesteaks during my 4 years of college in Philly. Can’t say I ever recall anyone toasting the bun. My progression went from provolone to American to wiz. Love ‘me all, but wiz is best for cheesesteaks.
    Love the Eagles jokes, hilarious. People need to lighten up. Hated the Eagles while at school in Philly, loved them since they beat Brady.

    Dude, the Philly Fun Facts literally had me in tears laughing. Love it. While I am not a Dallas or Philly fan (was a Skins fan, now Ravens), I do like Fletcher Cox. He's a fellow drag racer like myself.
    On the cook - I love this idea! I never thought of using ground chicken. Love the post cook follow-up as well.

    The follow up was great. You always say," I don't care what you are cooking on, I'm telling you time and temp." I've been cooking with pellets for over 20 years. My first Treager was made in Oregon and had to be bought from an independent dealer. Just get outside and cook.

    Fairly new sub, but knew of you prior. I really enjoy and look forward to your presentations Matt. I just turned 55 in Jan and it's funny you mention turning the bacon often. I just started doing that about a month ago and my bacon has turned out so much better. It really does make a difference. Hoping to make it to Texas for a vacation sometime soon, in that case I will make it a point to stop in. It would be nice to meet you sometime as well. Because of your passion for cooking for your family I almost exclusively use Meat Church seasoning. I have even turned a friend of mine that was previously only buying bearded butcher.     Really enjoyed the video and the after thoughts. I currently cook on a Blackstone Griddle because it’s the one I can afford at this point but I am saving for a Traeger. I just wanted say I agree the brand shouldn’t matter and thank you for all the videos. I have been able to make some of the best food of my life using time and temperature like you show in your videos.

      Love Matt’s commentary and recipes, and enjoy a Traeger smoker today. But their FlatRock griddle is overpriced. I don’t yet own a Blackstone, but seems the more logical choice. Traeger brand does not command a premium in the griddle market.

    I have a BBQ Hack griddle for my Grilla Grills and I like to use it on occasion for something like this video. I can’t say I want to invest in a full griddle but I don’t have zone cooking ability with what I have. Clearance between the griddle and the top of the smoker can be an issue too. I may have to try your recipe when it warms up though.
