Thanks for the video. Much appreciated. I’m 70 and live alone. There are times when I run out of food and am not fit enough to get to the stores. By keeping a good stock of the ingredients I will be able to make my own bread so I won’t go hungry. 😊

Besides baking soda, some people will cultivate wild yeast on the flour with a bit of water, for sourdough recipes. But it takes more time.

It works ;-) My wife even said it was good and opted for the fresh baked bread to go with her chicken salad.
We made an agreement many years ago that she wouldn't bake bread and I would be able to get through the doorway. 50 years later I'm maybe 15 pounds heavier than I was then (people did tell me I was too skinny) and now I'm baking bread to avoid a trip to the grocery store. Just waiting for the loaf to cool to finish slicing it.

I must say, that you would help the novice baker to understand better if you were to state the difference between yeast and non-yeast bread. One is a dough that requires some form of yeast, kneading, and proofing, while the other is a. batter requiring a leaven and then simply poured into a loaf pan and baked. I am in no way criticizing your expert technique, I am just remembering the days of old when I was a budding novice, and struggled to understand the why’s and how’s and science of baking. I must say that I truly enjoyed viewing your video and just wanted to share this small, but important bit of information with you . Thank you for sharing your wonderful knowledge indeed.

Even as you go to a grocery store you should keep a distance from people, wear a mask or a tied up scarf or tissue, and be attentive to where your hands are. The shopping cart handlers are like germ collectors, be sure to wash the items and your hands as you get back home. The items can even be left stored with some coat of soap/foam/water in the package, if it's plastic and won't absorb, so it doesn't require the full process of washing, the soap itself will destroy the virus and the soap could be dry later on when you'd use it. Just don't do that for things like bottles that could be slippery and shatter on the floor, those should be stored dry.

Italians make a cake which is more like a bread. Any baked item like this will fill a gap in what can go on the table. Australians make a simpler version again, called Damper. You can put butter and jam on it, or something savory or use to mop up gravy. Every country has their own version of "make do" bread when yeast isn't available.
