I worked at Chick-fil-A in the late 90’s. That sounds about right for the recipe. And, yes, pickle juice. It’s also used for the grilled chicken. We didn’t coat the chicken in bags, because we did too much at once. It was done in big bins. You had a bin with your milk mixture (that also definitely had black pepper added to it as well) soaked nuggets beside a bin with the coating. Here’s the step we did back then that makes a huge difference in crispier coating -we double coated the nuggets. We’d put the wet nuggets into the dry ingredients and coat really good, then put them back into the milk bath and then coat again with the dry. I have been doing my homemade chicken that way ever since! So good and crispy!

I've worked at Wendy's twice and we don't make the frosty's in store, we receive it pre-made in a bag (chocolate and vanilla) so if they worked for Wendy's they did not work in the actual restaurant, they worked wherever we recieved it from

@@beautyindarkness8146 yeah as I said above, I know how sugary it is. Even still, it wasn’t the only very sugary thing in the mix. Cool whip is literally heavy cream and sugar. Chocolate milk is just milk with a very sugary chocolate syrup in it. All three combos are very sugary, so condensed was not the “main sugar” item it was the third sugar additive in the mix. I’m not hating, was just making a statement and I thought it was just funny how he said it.

As someone who used to work at starbucks, the vanilla syrup and the caramel syrup are the same thing. They're both vanilla, but people imagine it's carmel-y when they want to.
Ex-Wendy's employee, here. Wendy's does not make the frosty mix in store. It's a bag of ice cream mix (a bag of liquid) that they dump into the frosty machine.
I came to say this, my mil and hubby worked for them so I know it's just a mix you dump in and it hasn't changed in at least 40 years because he was a was not born when she started and a baby when she quit and he worked there in his teens, I had a friend who's son worked there last year and we are 41 so it's been that long

I just didn't know what we bread it in because it's made at a seperate location and then sent to the resteraunt in premade bags. Also, you're right, we didn't use ziplock bags to bread them lol We had a metal basket that we shook it all up in. That's an over-simplification, but I'm sure you get the idea. Also, we cooked them in big pot-like machines called "hennys" which had tight lids that we had to lock while cooking. The terrifying thing is, that those things are highly pressurized and if anything went wrong those things are basically giant bombs filled with boiling oil, so that was a fun realization...
I actually saw one in the video about him renovating his filming space basically that person was saying that he was privellaged and shouldn't be spending all his money on that but everyone was bashing them so they kept quiet

I used to work for McDonald's & I'll give you this one for free hon. The fries have a couple things people often overlooked but one is that after a good soak to remove excess starch the fries are sprayed in a heavy sugar water just below simple syrup. This is the secret behind that perfect golden brown. Two, they are cooked 3 times, par fry, 2nd fry & frozen then fried a 3rd time at the time you order in a combination of 4-5 different oils which are listed publicly

There are a boatload of videos on YT in which people re-create fast food items exactly. The one I've seen the most is McDonald's fries, but interestingly, while they are mostly the same, there are a few differences in some of the videos for that. In any case, none of these recipes are actually "secret"; they have been copyrighted, and in order to do that, the exact recipe (including preparation instructions) must be submitted to the gov't copyright office, and copyrights are (surprise!) public information. While you can get the recipes and make them at home, you aren't allowed to use them in your own restaurant or other business for profit or other distribution to the public. Also, the vast majority of fast food items are delivered to the restaurants in a pre-prepared form, so the restaurants themselves don't do much but cook/re-heat them before serving. Therefore, it's highly unlikely that anyone who works in a fast food shop would have any "secret" knowledge about the recipes. But yes, please do a part 2, part 3, part 4 and as many other parts as your little heart desires because I love your videos. :-)
I'm surprised this hasn't blown up yet! Honestly thank you for making this video for us. This morning I made ham and cheese bancakes, and I noticed it tasted like a McToast. Only difference was the bread. So I thought I'd find the secret recipes for their buns but couldn't find anything. Then TH-cam recommended this video to me....
The thing about employees leaking recipes is that a lot of these restaurants get ingredients pre made in large containers. Someone from McDonalds isn’t personally making the special sauce for the Big Macs. McDonalds does publish the ingredients per law. They are as follows: Ingredients: Soybean Oil, Sweet Relish (Diced Pickles, Sugar, High Fructose Corn Syrup, Distilled Vinegar, Salt, Corn Syrup, Xanthan Gum, Calcium Chloride, Spice Extractives), Water, Egg Yolks, Distilled Vinegar, Spices, Onion Powder, Salt, Propylene Glycol Alginate, Garlic Powder, Vegetable Protein (Hydrolyzed Corn, Soy And Wheat), Sugar, Caramel Color, Turmeric, Extractives Of Paprika, Soy Lecithin.

And they aren’t standing in a McDonald’s kitchen adding xantham gum, propylene glycol alginate, and caramel color to their sauces before spreading on the Big Macs. But they wouldn’t be mixing in the individual McDonalds. Places like this see consistency as quality, and you can’t get consistency in fast food by having employees hand making the sauces. Everything is provided by a supplier to McDonalds.
I was not surprised when you said there was sugar in the chicken nuggets. Sugar and salt in the right balance creates a "bliss point" in food; if you look at all the packaged foods you will see both on there.
I will definitely try the sauces! Big mac sauce is my fave, i tried to make it by the simple recipe i found online (ketchup, mayo, pickles, little mustard) it was nice, but now I'll try this special one!
The Big Mac sauce is more or less 1000 island salad dressing. The Wendy's Frosty is made in a frozen bowl and its supposed to be very thick and difficult to drink with a straw, so they give you a spoon. I discovered how to make the McRib. Encore frozen dinners sells a rib like processed meat just like the McRib. So all you need is that, a seeded hoagie bun, sweet onions, and dill pickles. That's really all there is to the McRib, and all these things can be found in your local grocery store. So, no more having to wait til December to get one.
also because they literally cant...its a recipe, someone can make it at home by accident. Like the big mac sauce is just thousand island dressing....how could they sue you for using a dressing you can buy at the store? haha
Part of the problem with secret recipes or even the 'tradition' of various staple fast foods is that they change over the years. For instance, McDonald's fries were so much better when they were deep fried in beef tallow and it took a crazy concoction of other ingredients for them to get close to that flavor they used to have.
So glad YT recommended your channel to me! I have done the Wendys frosty before - try adding a little chocolate syrup if you make it again, that really sealed it for me.

I worked at McDonald’s forever ago and EVERYONE asked me about Mac sauce. All the food comes in big packages. Max sauce was the only thing that didn’t have ingredients listed. (But it’s basically thousand island dressing, ketchup, mayo, and sweet pickle relish.)
There is no way that standard employees would know the recipes. They only get the food in packaging, they don't mix it themselves. I presume they read the ingredients list and then just tried to make their own recipes through trial and error. I mean there can only be so many variations of the same ingredients

The thing about employees leaking recipes is that a lot of these restaurants get ingredients pre made in large containers. Someone from McDonalds isn’t personally making the special sauce for the Big Macs. McDonalds does publish the ingredients per law. They are as follows:
Ingredients: Soybean Oil, Sweet Relish (Diced Pickles, Sugar, High Fructose Corn Syrup, Distilled Vinegar, Salt, Corn Syrup, Xanthan Gum, Calcium Chloride, Spice Extractives), Water, Egg Yolks, Distilled Vinegar, Spices, Onion Powder, Salt, Propylene Glycol Alginate, Garlic Powder, Vegetable Protein (Hydrolyzed Corn, Soy And Wheat), Sugar, Caramel Color, Turmeric, Extractives Of Paprika, Soy Lecithin.
Well, they have to list the ingredients for the mayo, mustard, pickle juice etc, so it could be accurate
@@MygirlsGJPB Exactly. The ingredients reflect the individual items mixed together. And they aren’t standing in a McDonald’s kitchen adding xantham gum, propylene glycol alginate, and caramel color to their sauces before spreading on the Big Macs. But they wouldn’t be mixing in the individual McDonalds. Places like this see consistency as quality, and you can’t get consistency in fast food by having employees hand making the sauces. Everything is provided by a supplier to McDonalds.

I was not surprised when you said there was sugar in the chicken nuggets. Sugar and salt in the right balance creates a "bliss point" in food; if you look at all the packaged foods you will see both on there.

I will definitely try the sauces! Big mac sauce is my fave, i tried to make it by the simple recipe i found online (ketchup, mayo, pickles, little mustard) it was nice, but now I'll try this special one!

The Big Mac sauce is more or less 1000 island salad dressing. The Wendy's Frosty is made in a frozen bowl and its supposed to be very thick and difficult to drink with a straw, so they give you a spoon. I discovered how to make the McRib. Encore frozen dinners sells a rib like processed meat just like the McRib. So all you need is that, a seeded hoagie bun, sweet onions, and dill pickles. That's really all there is to the McRib, and all these things can be found in your local grocery store. So, no more having to wait til December to get one.

Part of the problem with secret recipes or even the 'tradition' of various staple fast foods is that they change over the years. For instance, McDonald's fries were so much better when they were deep fried in beef tallow and it took a crazy concoction of other ingredients for them to get close to that flavor they used to have.

I worked at McDonald’s forever ago and EVERYONE asked me about Mac sauce. All the food comes in big packages. Max sauce was the only thing that didn’t have ingredients listed. (But it’s basically thousand island dressing, ketchup, mayo, and sweet pickle relish.)

There is no way that standard employees would know the recipes. They only get the food in packaging, they don't mix it themselves. I presume they read the ingredients list and then just tried to make their own recipes through trial and error. I mean there can only be so many variations of the same ingredients
