Hi! Thai (isan) dude here...been making larb all my life. I really appreciate your interpretation of larb, and yes if you into keto this is an amazing recipe. I'm going to list a few things you can do to improve or ease the cooking process (and for those who want the more authentic recipe). 1.) At my dad's restaurant, we would toast the rice with lemongrass and kaffir lime leaves to impart aroma into the rice. 2.) We usually don't make fish sauce/lime mixture...we just add them to larb when everything is done in the mixing bowl. That being said, this is great way to standardize for a newbie cook 3.) Lime zest is not necessary (never seen people doing this). That being said I'll try it next time I'm making larb cuz it looks pretty interesting : ) 4.) Look for Thai chili. Does not matter what color it is...any Thai chili would work 5.) While pig ear is pretty typical in pork larb, a lot of home cook bypass this ingredient cuz it's a pain to work with. Also, we generally don't fry the ear for larb. Instead, we boil it. The ear is super gelatinous and frying/cleaning the pot/getting everything splashed on... is an experience of itself. That being said...deep-fried/grilled pork ear is amazing (literally cocaine and I would put on my larb if I have them lying around). If you want to fry them, make sure you dry them after boiling. Dry them in oven or dehydrator....it will save your face. Also stir them like a bitch so they don’t get stuck 6.) We usually just boil pork with very little water. Put enough water to just cover the bottom (like a cm deep) and put a teaspoon of salt in. Stir until it is cooked. 7.) The authentic recipe call for lemongrass, galangal, garlic, shallot, cilantro, and (i hear some people put kaffir lime leaves too). Mint leaves are often used for topping. However, some of this stuff is pain in the rear to find so Matty's recipe is very convenient. (I been living in the US for a while now and I use white or red onion in place of the shallot. You can buy frozen lemongrass and galangal here.) 8.) A spoonful of MSG. Seriously tho...... 9.) If you have thai chili powder lying around..use that too. It adds toasty..smoky aroma to the dish. Goddamn, I need to make this.... Edit: A lot of people (including me) use pre-made larb seasoning mix/powder on top of the stuff above. I usually use Lobo brand. This stuff contains a decent amount of MSG ;)

Matty I am from PH, so we cook pork ears usually. To avoid the oil to go crazy jus like what happened on your vid, Please do not chop the ears in small pieces. Fry it whole and chop it after or after the ears has been boiled set it aside to dry itself. Hope this works Matty. The video is super fun tho.

Watched this while hungry. Whipped up something random using this recipe. Used bacon instead of pig ears, used ground shrimp instead of pork, and used less fish sauce, filling the rest with water since that bacon added extra salt. Idk what it was supposed to taste like but whatever I made was dope. Thanks Matty!

@@olgakim4848 all i can say tho in laos its usually spelled laab and even spelled larb is ptonounced laab thats just our cultures pronounciation but it bothers me when someone makes a tutorial and doesnt know how to pronounce it. I was at Kirin restaurant in Vancouver and they served shrimp larb for my friend's wedding. I have had about 2 larbs for the first time and never again. I remembered the crunchy, soft shrimp meaty texture, the mild mixture blend of taste yet strong enough to blow your mind, the freshness of the cabbage... I have had only TWO of these and that was fucking 24 years ago. I never even knew what it is called or exactly what it is because the special dish is not on their menu. Believe me, I have looked into so many Chinese seafood dish that's similar but I just couldn't find it because it was FUCKING THAI And it's NOT SEAFOOD ORIGINAL and my Thai food experience is very limited. Since I have no idea the name, I just can't find the recipe of it. But NOW I DO. I just wanna say that you made me very happy man today. I now know the Chinese chef made larb and changed the meat and spice from the video you showed here.
