As an American that grew up on fresh raw mild, you did everything wrong with your milk. You milk the cow and immediately cook it. You bring the milk slowly to a boil. As soon as it starts to boil, take the milk off the heat and allow it to cool. Then, strain the milk through cheesecloth and refrigerate. You'll have sweet, creamy (uncurdled) milk. You can also seperate the cream from the milk before you boil it and it will be even easier. You won't have to bring it to a full boil. Just wait until it starts to bubble, then let it cool.
This! As an American who spent a couple years in India, I can also vouch for this process. This process is what we followed when we would buy fresh milk (this was a process I picked up from my wife's family in Delhi). If you follow this process you'll get great fresh milk! 🤘

Benjamin You just have to boil milk for 10-20 min . You don’t need to stir it . After cooling if you don’t like the solids you pour through a strainer . I have grown up on raw fresh boiled milk and never had an issue and even get raw milk here in Virginia through cow herd share .
Yes Benjamin, kindly make sure the vessel you gonna boil the milk is clean (recommend to wash it with drinking water), I don't recommend using tap water (mostly salt content water in Tamil Nadu in taps) it shall spoil the milk. u shall stir the milk or nah its upto you (if you don't stir, its easy just wait till it overflows to the brim of vessel and turn the gas off). Note:- dont touch the milk unknowingly which you are going to store for next day it shall spoil it.
once you finished heating the milk, only the top most layer forms a solid layer. Remove it with a spoon if you don't like it (trust me if u got used, then that layer is most yummy :P).

We use packet milk for tea and cow milk for drinking. BTW, the packet milk sold in India is actually buffalo milk. Check out Dr Kurian wiki page where he wasted many years of his life trying to process cow milk for mass circulation in packet but failed every time. He later experimented with buffalo milk and was extremely successful. He spearheaded indian milk for all revolution. Amul is actually his creation.
Bro you don't have to stir it all the time just put it in any utensil and watch it boiling. When it start boiling and begins to rise up, cutoff the gas and let it cool for an hour or 2 in normal room temperature. After that the solid chunks aka malai will form a thick layer above the milk just filter it, you will find the filtering utensil there in market. Then you are good to go.
Bro you just need to place the fresh milk into the stove and it gets heat and automatically it boils no need to stir how to know thw correct time for boiled you may ask the correct time is that the milk suddenly comes up you need to off the stove and leave until it gets to room temperature
There are 2 possiblity: 1.) That may be cream, let it cool & when its is at room temperature, put it inside fridge. You will get thick layer & you can seperate it out. 2.) The milk may have been broken into paneer aka cheese. If something which is salty & sour remains left in the utensil after cleaning, the milk may split up into pieces. Clean uensil thoughly with water in that case.
Fresh milk is not same as homogenized milk. You don't have to stir the milk while boiling. Cream would be formed on top of milk while heating and it would cause the milk to rise rapidly once enough of heat is trapped. That is when we switch off the flames. Stirring and boiling would reduce water content in milk and whatever leftover would be more creamy. Most of Americans get homogenized and pasteurized milk. Homogenous milk has cream evenly mixed which does not allow creamy lumps to form in milk. Hope this helps.

U can drink raw milk upto the time when it is naturally warm due to the body heat of Cow/Buffalo, once it starts losing its natural warmness dont drink it, then boil it within 2 hrs after milking and then drink. 2. Procedure: A).Use thick stainless steel pot of 2 litre size for 1 litre milk to boil. B). Strain raw milk before boiling. C). It takes only 10 mins to boil milk, in the 1st half heat up milk and once it starts to fizz out of pot lower the flame, here 2nd half starts , continue to boil for 5 mins, if you want thick layer of cream/Malai boil for 10 mins , and during this don't dare to stir milk,no need of it, u r not making Basundi or Milk desserts so dont fuckin boil n stir it for 30 mins. D). Put milk pot in cool place to cool down it and don't put it directly into refrigerator just after boiling. E). If u want to use milk just after boiling then use after separating cream layer aka solids or Malai and u can make Ghee from this cream / Malai. F). After cooling to room temp. U can put it into refrigerator in same steel pot , don't use plastic jars.
I drink boiled fresh milk. I boil it for 3 mins in an induction stove. Fresh milk stays good for 4 hours. Best to boil it for 5 mins in high flame in Gas cooktop.

Don't boil it for too long, once it starts raising up in the vessel then you off the gas and change the milk to a glass and IN CASE OF FRESH MILK IF YOU LEFT IT UNDISTURBED FOR 2 MINUTES IT WILL FORM DUMPLINGS OVER THE SURFACE. You can filter it with Sieve then you are ready to drink.
Curdling of milk is sign of milk is spoiled. That happens if utensil used either by person who delivered the milk had some impurities or your pot had some impurities. That is why in India we always boil the milk which also serves a test if milk will spoil or not. If you don't boil the milk then probably milk will spoil in stomach which is not good. If you bring it to a boil, and then take it off of the fire, you _are_ following your doctor's orders. You could also collect the cream and heat it to make ghee every weekend. 9. Also since you are American, you probably drink cold milk. Indians rarely drink milk cold. We drink it hot, very hot, scalding hot..... 10. If you do not like the solids, strain the milk using a strainer. If you have ever made tea, Indian style, you should have the strainer. 11. If you decide to boil it again, make sure remove the skin from the top. Preferably, strain it. Otherwise, the milk solids (cream) will turn into ghee. If you do not like solids in your milk, trust me, you will not like ghee in your milk. 12. Btw, the packages milk you get in India is pasteurized but not homogenized. (Go ahead, check the label). What this means is that if you were to boil the packages milk, you would get the same milk solids that you got in raw milk. 13. Traditionally, raw milk is delivered to Indian homes first thing in the morning. The leftover milk is set to make yoghurt at the end of the day. In our family we consume fresh milk every day...but we don't boil it for 30 mins....you just need to bring to boiling point once it cools down I keep it refrigerator tomorrow morning all creams and solid and formed on top remove it collect it for abt 15 days...once in 15 days I make my butter paneer and ghee out of it....and those butter paneer and ghee are very healthy as there is not preservatives added..

Generally authentic raw cow milk have a yellowish color. Also sometimes drinking raw cow milk is not good not because of bacteria but some people can't digest it So if you are not used to it then it's better to boil it for 2/4 minutes
Homogenization disperses the fat and stopes forming creamy chunks and that is the idea of homogenization ! When you boil natural milk without homogenization it will create a creamy layer by combining with the milk protein at top, locally known as ‘paada’! You can filter it out using a fine sieve and the milk will be clear of this creamy chunks! If you keep boiling slowly and turning it to evaporate the milk, it will become a paste they call ‘Rabdy’ ! Adding some sugar in the beginning and do this you will get a Rabdy that is sweet and tasty! No bacterium will survive once you bring the milk to boiling point and there is no danger of infection, drinking after that.

Fresh milk is much healthier then package milk. Few observations: 1. Please boil your milk in a well cleaned vessel else it will go sour (seperation of milk solids from liquid (this is how cheese are made)) and as per my observation it is the case with you. And it is not healthy to drink sour milk. 2. Normal boil your fresh milk for 2 more minute after first boil (best way yo boil) 3.. You can also try Amul (India's largest dairy products brand) package dairy products (best in quality)

The one you had in the last was of gir cow, it is an indigenous species of India from wild gir forests of gujarat. The species is 'bos indicus' and it gives A2 protein milk. While the local cow and the dairy packaged milk you had is from the species called 'bos Taurus' which comes from Europe region, it gives A1 protein milk. There are lots of articles on A1 and A2 milk, do your Research on it.
There are other indigenous breeds of India which gives A2 milk. You can get to see in tamilnadu as well. Each state in india has its special indigenous breed. Again do research...

@@bjenks that's not rare... In fact in my state of Maharashtra it's rare to have Cow milk... We prefer Buffalo milk as it's thicker more creamy than cow's milk... Let's say we test milk on fat rating... For cow's milk fat rating (Density) is 4 to 5... But for Buffalo Milk it's minimum 7... And more rating it gets more creamy and tastier it gets.... Note : Cow's milk smells and pale in color... But Buffalo milk is more white and smells less... And we raise cows just to sale it's milk we don't drink for ourselves, most of us... You should drink non packaged milk within 12 hours and you should boil it. Or it will become solid as yours. If you leave it for 24 hours without boiling you will get paneer which are those solid parts in your milk.
Once you use start using fresh milk you never like to return to packaged ones. Being born in village, I grew up drinking fresh milk twice a day. For boiling I just keep it low flame until it raises up to the rim of the vessel. It doesn't require any stirring in the middle
Raw milk is natural and free from all man-made chemicals. Just boil the raw milk, take aside the cream, you are good to go. When you make curd from that milk make sure there cream is added back and then you can make a nice home made butter with no artificial ingredients. Further, from that butter you can make ghee as well!
U should try Buffalo milk... And solid particles are just milk solids... That's not harmful at all... U boiled milk to much... and longer u boiled water content evaporates more, making milk taste more sweeter and thicker... Just boil for 5 mins don't stir... if it gets up to edge don't panic lower the heat or add some water.. let it cool normally (again don't stir) it will create malai on top of it which is again solid milk particles... U can eat it... tastes like sweet and heavenly... that malai used for making best quality curd, paneer, ghee, butter.. 😇😇
i think the milk solids you mentioned were cream, we call it malai. Some people don't like it so they just use a seive(the thing they use to make tea) to separate it out. Boiling fresh milk does not take long. you dont have to stir or anything, just wait for the milk to come up and you cut the heat and drink! I personally prefer buffalo milk over cow's since that's what i've always had. Its much for creamy and fatty, but the taste is amazing. You could give it a shot after consulting a doctor, of course.
Interesting experiment. Raw milk needs to be heated only in utensils that have been thoroughly cleaned with good clean water. Fresh raw milk is very sensitive and prone to curdle if there are any impurities. The milk would have tasted much different had you cooled and refrigerated the boiled milk and then separated the layer of thick cream that settles on its surface. It also makes delicious cream, yoghurt, butter and ghee. Buffalo milk tastes even better and is much more popular. .
You got the chunk May be because you boiled it too long. Also if your utensil is not super clean or has some residue of soap or cleaning material then you will get the chunks . The boiling utensil has to be extremely clean, rinse it with fresh water several times before you pore milk into it and boil for 10minutes. While boiling always stir it with a clean steel spool and reduce the flame of the burner to its lowest level, then you will get very good milk without any chunks.
bro it is not advised to boil milk 30 min , you just need to pour the milk in the vessel (and don't stir) after 2-3 min milk starts to boil and it will start to overflow and now the milk is ready you can now add some sugar and now you drink , it will be insane

I did that at the Gwalior gurudwara on top of the hill the first time. Still warm from the cow, and the tastiest. The helper just ran it through a quick sieve and handed me the largest glass of the creamiest milk ever. Another time at a milk shed in Pelling, Sikkim. Fell in love with milk all over again (though honestly, there hasn't been a time when I haven't been in love with milk! :D). 'Raw' within 1-2 minutes is a taste you never forget ❤

When the milk becomes hot, add 1 or 2 crushed cardamoms to it and also a little bit sugar drink it after filtering it through a sieve.

1. You need to use properly clean and sterilized utensils for boiling milk. Impurities or any acidic food remain can spoil the milk during boiling and the curdling is due to that only.
2. Fresh milk should be boiled immediately like within 30-60 mins
3. If any curdle or milk solid begin to appear while boiling milk, don't drink it at all as it is an indication that milk has gone bad

Yes Benjamin, kindly make sure the vessel you gonna boil the milk is clean (recommend to wash it with drinking water), I don't recommend using tap water (mostly salt content water in Tamil Nadu in taps) it shall spoil the milk. u shall stir the milk or nah its upto you (if you don't stir, its easy just wait till it overflows to the brim of vessel and turn the gas off). Note:- dont touch the milk unknowingly which you are going to store for next day it shall spoil it.
once you finished heating the milk, only the top most layer forms a solid layer. Remove it with a spoon if you don't like it (trust me if u got used, then that layer is most yummy :P).

We use packet milk for tea and cow milk for drinking.
BTW, the packet milk sold in India is actually buffalo milk. Check out Dr Kurian wiki page where he wasted many years of his life trying to process cow milk for mass circulation in packet but failed every time. He later experimented with buffalo milk and was extremely successful. He spearheaded indian milk for all revolution. Amul is actually his creation.

Bro you don't have to stir it all the time just put it in any utensil and watch it boiling. When it start boiling and begins to rise up, cutoff the gas and let it cool for an hour or 2 in normal room temperature. After that the solid chunks aka malai will form a thick layer above the milk just filter it, you will find the filtering utensil there in market. Then you are good to go.
In Gujarat, people prefer to drink raw milk rather than boiled or processed.

Stain the solid material aka malai with a stainer
There are 2 possiblity:
1.) That may be cream, let it cool & when its is at room temperature, put it inside fridge. You will get thick layer & you can seperate it out.
2.) The milk may have been broken into paneer aka cheese. If something which is salty & sour remains left in the utensil after cleaning, the milk may split up into pieces. Clean uensil thoughly with water in that case.
Fresh milk is not same as homogenized milk. You don't have to stir the milk while boiling. Cream would be formed on top of milk while heating and it would cause the milk to rise rapidly once enough of heat is trapped. That is when we switch off the flames. Stirring and boiling would reduce water content in milk and whatever leftover would be more creamy. Most of Americans get homogenized and pasteurized milk. Homogenous milk has cream evenly mixed which does not allow creamy lumps to form in milk. Hope this helps.

Hey Benjamin, Tips for Raw Milk :
1. U can drink raw milk upto the time when it is naturally warm due to the body heat of Cow/Buffalo, once it starts losing its natural warmness dont drink it, then boil it within 2 hrs after milking and then drink.
2. Procedure: A).Use thick stainless steel pot of 2 litre size for 1 litre milk to boil.
B). Strain raw milk before boiling.
C). It takes only 10 mins to boil milk, in the 1st half heat up milk and once it starts to fizz out of pot lower the flame, here 2nd half starts , continue to boil for 5 mins, if you want thick layer of cream/Malai boil for 10 mins , and during this don't dare to stir milk,no need of it, u r not making Basundi or Milk desserts so dont fuckin boil n stir it for 30 mins.
D). Put milk pot in cool place to cool down it and don't put it directly into refrigerator just after boiling.
E). If u want to use milk just after boiling then use after separating cream layer aka solids or Malai and u can make Ghee from this cream / Malai.
F). After cooling to room temp. U can put it into refrigerator in same steel pot , don't use plastic jars.
I drink boiled fresh milk. I boil it for 3 mins in an induction stove. Fresh milk stays good for 4 hours. Best to boil it for 5 mins in high flame in Gas cooktop.
When the milk becomes hot, add 1 or 2 cardamoms to it and also a little bit sugar drink it after filtering it through a sieve.

Curdling of milk is sign of milk is spoiled. That happens if utensil used either by person who delivered the milk had some impurities or your pot had some impurities. That is why in India we always boil the milk which also serves a test if milk will spoil or not. If you don't boil the milk then probably milk will spoil in stomach which is not good. Once in a while it happens the milk may spoil. I vividly remember it happened once in a while during my child hood days in India and my mom would say "Ooh milk is spoiled today" and next day she would take a class of our milk delivery man.

The "solids" are the cream and milk solids that have not been pushed through screens until they turn into minuscule cream particles during the homogenization process. Fresh milk is highly sensitive to its surroundings....meaning if u use an unclean vessel or vessel with any kind of dust the milk will be spoiled (meaning when u boil it [boiling is almost pasturising], the milk will split and form chunks)....Titbits: always keep a well cleaned and separate vessel to handle fresh milk, keep fresh milk away from any cirtic things......

But ones hot milk (that too fresh milk ) expose to air, the cream or the fat in the milk become a layer and when you start stirring it with spoon it breaks and become bits, whitch you found in your milk. I hope you know that butter is made out of the cream i.e malai

First take the fresh milk from the dairy and then boil it immediately. After boiling when it cools down keep it in refrigerator. In this way you can store milk for two days.
Boil it in slow flame for max 10 minutes .you boiled it more makes it thicker.
Milk curdles while boiling if the pot or spoon used for boiling has dish soap or bits of food sticking to it. And also if Milk stands more than half an hour in room temperature it may curdles. it has to be properly refrigerated.
Now a days you get the A2 desi milk in packets, both pasteurized and unpasteurized in Bangalore. I miss Bangalore.
Those solids are cream. When you boil the milk, a skin forms on the top. This skin is cream. When you stir it, the skin breaks down and forms the solids.
Here is how you should boil milk.
1. Place milk to boil ASAP. If you leave raw milk for more than a couple of hours, it WILL curdle.
2. Keep the heat at medium. 1 litre of milk should reach boiling temperature in about 15 minutes.
3. Turn off heat as soon as it starts to rise.
4. Cover and let it cool to room temperature.
5. Refrigerate after it has reached room temperature.
6. If you do not Refrigerate, you will need to boil it again after a few hours.
7. DO NOT, I repeat DO NOT EVER stir while it is boiling. Let it boil untouched, unless you are planning to make a dessert with the milk.
8. When the milk cools down, you will see skin on top. When you Refrigerate it, the skin will become thicker. The better the milk quality, the thicker the skin. This skin is cream. You can scoop of this cream from the top and churn it for a few minutes to make butter. You could also collect the cream and heat it to make ghee every weekend.
9. Also since you are American, you probably drink cold milk. Indians rarely drink milk cold. We drink it hot, very hot, scalding hot.....
10. If you do not like the solids, strain the milk using a strainer. If you have ever made tea, Indian style, you should have the strainer.
11. If you decide to boil it again, make sure remove the skin from the top. Preferably, strain it. Otherwise, the milk solids (cream) will turn into ghee. If you do not like solids in your milk, trust me, you will not like ghee in your milk.
12. Btw, the packages milk you get in India is pasteurized but not homogenized. (Go ahead, check the label). What this means is that if you were to boil the packages milk, you would get the same milk solids that you got in raw milk.
13. Traditionally, raw milk is delivered to Indian homes first thing in the morning. The leftover milk is set to make yoghurt at the end of the day.

To remove the solids let the milk cool for some time. The solids will be on the top you can easily separate it via a spoon or a strainer. I grew up on fresh milk since my childhood. Almost every Indian drinks fresh milk.

Homogenization disperses the fat and stopes forming creamy chunks and that is the idea of homogenization ! When you boil natural milk without homogenization it will create a creamy layer by combining with the milk protein at top, locally known as ‘paada’! You can filter it out using a fine sieve and the milk will be clear of this creamy chunks! If you keep boiling slowly and turning it to evaporate the milk, it will become a paste they call ‘Rabdy’ ! Adding some sugar in the beginning and do this you will get a Rabdy that is sweet and tasty! No bacterium will survive once you bring the milk to boiling point and there is no danger of infection, drinking after that.

Fresh milk is much healthier then package milk. Few observations:
1. Please boil your milk in a well cleaned vessel else it will go sour (seperation of milk solids from liquid (this is how cheese are made)) and as per my observation it is the case with you. And it is not healthy to drink sour milk.
2. Normal boil your fresh milk for 2 more minute after first boil (best way yo boil)

@@bjenks that's not rare... In fact in my state of Maharashtra it's rare to have Cow milk... We prefer Buffalo milk as it's thicker more creamy than cow's milk... Let's say we test milk on fat rating... For cow's milk fat rating (Density) is 4 to 5... But for Buffalo Milk it's minimum 7... And more rating it gets more creamy and tastier it gets....
Note : Cow's milk smells and pale in color... But Buffalo milk is more white and smells less... And we raise cows just to sale it's milk we don't drink for ourselves, most of us... For daily use we prefer Buffalo milk.😇😁

You should drink non packaged milk within 12 hours and you should boil it. Or it will become solid as yours. If you leave it for 24 hours without boiling you will get paneer which are those solid parts in your milk.
Once you use start using fresh milk you never like to return to packaged ones. Being born in village, I grew up drinking fresh milk twice a day. For boiling I just keep it low flame until it raises up to the rim of the vessel. It doesn't require any stirring in the middle

Raw milk is natural and free from all man-made chemicals. Just boil the raw milk, take aside the cream, you are good to go. When you make curd from that milk make sure there cream is added back and then you can make a nice home made butter with no artificial ingredients. Further, from that butter you can make ghee as well!

U should try Buffalo milk... And solid particles are just milk solids... That's not harmful at all... U boiled milk to much... and longer u boiled water content evaporates more, making milk taste more sweeter and thicker... Just boil for 5 mins don't stir... if it gets up to edge don't panic lower the heat or add some water.. let it cool normally (again don't stir) it will create malai on top of it which is again solid milk particles... U can eat it... tastes like sweet and heavenly... that malai used for making best quality curd, paneer, ghee, butter.. 😇😇

i think the milk solids you mentioned were cream, we call it malai. Some people don't like it so they just use a seive(the thing they use to make tea) to separate it out.

Interesting experiment. Raw milk needs to be heated only in utensils that have been thoroughly cleaned with good clean water. Fresh raw milk is very sensitive and prone to curdle if there are any impurities. The milk would have tasted much different had you cooled and refrigerated the boiled milk and then separated the layer of thick cream that settles on its surface. It also makes delicious cream, yoghurt, butter and ghee. Buffalo milk tastes even better and is much more popular. .
You got the chunk May be because you boiled it too long. Also if your utensil is not super clean or has some residue of soap or cleaning material then you will get the chunks . The boiling utensil has to be extremely clean, rinse it with fresh water several times before you pore milk into it and boil for 10minutes. While boiling always stir it with a clean steel spool and reduce the flame of the burner to its lowest level, then you will get very good milk without any chunks.

and now the milk is ready
you can now add some sugar and now you drink , it will be insane

Everyone gets bcg vaccine... I think it's the first vaccine to be given to the babies and then there are more to to be given at certain time intervals after birth to every baby.... I will know better when I will have my child😅

I used to drink milk without even boiling with 1 minute it was extracted , and it was way more tasty , try it once if possible.
I did that at the Gwalior gurudwara on top of the hill the first time. Still warm from the cow, and the tastiest. The helper just ran it through a quick sieve and handed me the largest glass of the creamiest milk ever. Another time at a milk shed in Pelling, Sikkim. Fell in love with milk all over again (though honestly, there hasn't been a time when I haven't been in love with milk! :D). 'Raw' within 1-2 minutes is a taste you never forget ❤

Buy hump back cow milk ... in package its called A2 milk.... we love raw milk directly from cow .... cause if u boil milk once it's okay... but now a days in city it's tough to find actual cow milk .... we in our house had Buffalo milk which is more thick .... we use it also to make curd
