    Signature soup for Mbieri people, in Imo state!!! They call it OFE AKWUKWO.It comes with snails, lots of Ugu leaves or pumpkin leaves- (hence, ofe akwukwo), okoro, ugba, dry fish and stockfish. No ogiri is added. The ugba used, is the soft and some what fermented ones and roasted with the leavy wrapper, in an open fire,before adding into the soup. This roasting brings out the charateric smell of the Ugba. Little water is used. DELICIOUS!!!

    In all my existence on this earth, this is my first time hearing of this kind of soup and believe me, I've here for so long. Wow! It looks like something I would enjoy too. What part of Ibo prepares this 'ofe ugba'? Also the word 'obstacles' got me cracking up. You have a way with words...lol!

      It's very tasty Zomiks! Nigerian gastronomy is so vast. When I tell people that I have not even scratched the surface when it comes to Igbo recipes alone, they think I am joking. And when you talk about other tribes? We will never know about them all.
      To the best of my knowledge, Ofe Ugba is prepared in Imo and Abia states. And with some parts of old Imo state now in Ebonyi we can include that. :) hehehe @ obstacles! Thank you!

    nnem oo, biko if I don't have ogiri okpi, what could I use as a substitute. I love watching your cooking

      Stock cubes (bouillon) are the oyibo substitutes for ogiri okpei so you can skip it. I'm glad. :)

    Is Oil bean available outside of Nigeria? Is there a possible substitution if I cant get it in the USA

      Shredded oil bean is available in some Nigerian food shops in The USA, mostly in the very big cities like Houston where lots of Nigerians live. There is no known alternative to it.

      Yes o, traditionally it should be okra. But who says you can't prepare it another way? ;) What else do you plan to use?
      And now that you asked this question, I am wondering what it would be like if prepared with just ugba? For that, I would use more ugba, grind half of it and use it as thickener for the soup! And add the other half as it is. I have never prepared it this way o but that's what I would do if I were to prepare it that way. :)

      No, I just pick out the debris and tiny shells if any. That's why it's still dry in the grinder.

      @@Brosfam101 usually before I buy crayfish in the market, I taste it. If that batch contains sand I will notice it immediately and won't buy. Once there's no sand and I pick out the other unwanted elements when I get home, every other thing like "germs" will be destroyed by the heat when I'm cooking. Please note that this is how I do mine not a hard and fast rule.
      I know people that must wash their crayfish sand or no sand. But then they won't grind it with a dry mill. They either blend with a liquid blender or pound in a mortar.
