  • Ofe Achara is one of the most traditional Igbo recipes. The mgbam, akpuruakpu egusi or ogbaloti sets this Egusi Soup apart from the conventional Egusi Soup.

    Hi ma. I love watching your video. Am from imo state but my mum from Abia and she cooks Acharya soup so often. I want to remind you of Achi or Ofer. She never prepared achara soup without adding a little of Achi or ofor. Its the main thickener for achara soup. And uziza leave is always added. Thanks

    God bless you for this. I am from Umuahia so watching this video made me feel so good and reminded me of how my beloved mum (late now) used to make her ofe achara. But she used to pound the egusi and osu. Then no cray fish and ogiri in the akpuruakpu egusi. All the same, well done ma.

    I've eaten it only once, and I enjoyed it very much because it was cooked by an expert cook. But it's not common like other soups. Maybe I have to travel to Umuahia to get good ones from a nice restaurant.

    Achara or Elephant Grass (Pennisetum purpureum) may possibly be found in an African market. If not, seeds are available via Amazon and Ebay for those interested in growing their own. It is a very fast growing plant that can be harvested several times in a season, and can become as tall as bamboo.

    • @tubad4ya66
      @tubad4ya66 2 ปีที่แล้ว

      @@chukwusam4625 "Osu" in this recipe is a powder made from dried mushroom that is used to thicken soups. "Usu" I know as a South African word for ox or beef tripe.

    • @chukwusam4625
      @chukwusam4625 2 ปีที่แล้ว

      The úsú am talking about is still a type of mushroom. Commonly found in the southern part of Nigeria. The full name is.. ero úsú in my Igbo dialect. We use it as well in making egusi soup and egusi local cake. When freshly harvested, it's like a rough shaped ball. It's then washed, peeled and dried. Turned into a powder when you want to use in for cooking.... I remember my late mum doing all ( may her soul rest in peace).

    • @tubad4ya66
      @tubad4ya66 2 ปีที่แล้ว +1

      @@chukwusam4625 Yes, the scientific name of the úsú mushroom is Pleurotus tuber-regium. In English, it is called the king tuber mushroom.

    Every thing you used was perfect except okiri okpi and akpuruakpu egusi must be cooked more than 10mins at least 1hr to make sure is probably done. In the whole umuahia traditional delicacies we don't use ogiri to cook anything. And we don't put crayfish inside mgbam or egusi akpuruakpu. Thank you.

      +sophie igbinoba I don't know of any dear. I know some people pound the egusi dough in a mortar before making the balls to help hold it together more. You can try doing that. Just make sure the water is boiling very well before throwing the balls into it. The high heat will shock the balls and they will not disintegrate .. hopefully. :)
