My current project that I shouldn't attempt: Recreating the Great Pyramid of Giza in my survival world. If I just do the shell with a 230x230 block base (actual dimensions), then it will take 52,900 Sandstone to do it. It won't quite be the right height due to Minecraft geometry (only 115 blocks high and not 147), but I think it would still be an imposing structure. The biggest issue is going to be obtaining the 31 Shulker Boxes of Sandstone required for the project...
Your Stronghold-idea was good at the beginning: replace some blocks of brick with mudblocks, but not all. You did way to much in the end by replacing (almost) all. With a mixture of different types of bricks (regular, deepslate and mud) it would look much better and more interesting - a bit like someone found an Stronghold centuries ago and tried to repair damages, but hadn´t the skills nessecary for that. That could even bring some new lore-ideas into it all. Who found the stronghold and when did that happen? and why did they stopped their works and left again...

To calculate the amount of materials necessary you need to use the equation 20^x, where x is the level you are building. The level four took me 160,000 cobblestone. To collect the amount of cobblestone I used a long cobblestone generator with ice, slime, and pistons to push me around and afk mine all the cobblestone. The project took me around two months but I wasn’t playing daily. It’s a mundane task but incredible to look at and fly through. I can create a copy of the world on realms and show you if you want.
You know, when Toycat said Menger sponge, my mind pictured the meneger cube made of sponges, and I could not imagine how many Ocean Monuments you would need to raid to get that many sponges. FYI, level 6 is impossible in Minecraft. That would be 729 high, taller than the build limit. Level 5 at 243 high is the limit in Minecraft.

Finished it in a ridiculous 5 days. 7 hours a day - ended up being about 30 hours of playing and 5 hours of cutting down jungle trees. Somewhat considering going up to level 5 but that would 3.2 million blocks and 19 more of these things that took me nearly a week at the level of a full time job. Maybe over the next few years.

i have a challenge for you...i think you should build a massive dragon or dinosaur, using copper, diorite and deepslate in survival! also you can add other blocks too, but part of the challenge could be using a lot of the previously mentioned ones.
Fun Fact: My three perimeters are connected projects. Farming Wither Skulls for Beacons to dig out the Guardian Farm for Sea Lanterns for the floor of the Ice Box Redstone area under my main base that I'm expanding since the Deep Dark got added.
The beacon netherite is even less impressive knowing that afk (with an auto clicker) wither skeleton farms exist and that withers can be killed with dripstone via a pretty simple design

Lol I also replaced a section of the river by my base with one of those glass rivers that glow and I love it so I want to expand that at some point. But I went and got distracted from those by setting up a guardian farm and draining the rest of the monument. ADHD and Minecraft…. *Chef’s kiss* lol
My next absurd Minecraft project is a Basalt Castle build. I will build it within a basalt circle 180 blocks in diameter. This is going above my End Portal, which will have the stained glass effect around it, spanning the area of the basalt circle. This'll take awhile, but I believe it'll be worth it!
as a fellow /fill command user, you have to be VERY cAREFUL with the command if you don't finish the command properly. you could potentially just fill an area with the one block destroying structures.
Dude, i did that on my survival world (part of it) and it turned out to be great! I used oak slabs for the floor, snow blocks for the ceiling and smooth sandstone for the walls, did random patterns of walls and now i got lost on my own maze 🤣

You missed the Warped and Crimson forest as well as the acacia trees in the savannah biome EDIT: one project you shouldn't do but if you are going to do it its only going to be for an achievement (which is star trader which requires you to go to build limit and trade with a villager in order to get it)is build a tower that is of build height limit and if you want to torcher yourself even further with this is dig beneath it with floors going underground

i recently finished building a 154 block long giant dragon, which has features from spinosaurus, argentinasaurus, and with spikey armor like ankylosaurs, and a lot of the blocks i used include sculk, magma blocks, red nether bricks, deepslate, nether quartz, and diorite. it also has some frog lights, and it took about 3 months because I built it in survival!

You missed mega taiga snowy taiga acacia (savanna) wood as well as swamps NOT MANGROVE SWAMPS! As well as the nether forests and by the way jungles do not look better with mangrove wood! Edit: ps: if you really want to count it you missed flower forest sparse jungle bamboo jungle the mushroom trees
How about a minecraft world where you have 2 minutes to get into water, and then after that you can only step in water - you’re allowed to go to nether, but while there you have to place cauldrons and put water in them

I did something similar on my survival world, i dont remember the dimensions but it hit the old build limit and took 3 hours of purely putting blocks
I suppose you could make 32 layers two blocks tall instead so that it ends up 147.
