Classic bars in Japan use generic brands of liquor: Bacardi, Tanqueray, Beefeater... it’s on the bartender to thoroughly understand the liquors and other ingredients and have the skills in stirring, shaking, glass selection to create enjoyable cocktails. This, as far as I’m aware (and being a Tokyo resident) takes a good part of a lifetime.

1000 yen seating charge, I know places that you can't even get a small beer for that price and they don't have even have house rules. So for 1000 yen and the price of what you are drinking you get civilisation, totally worth it.
I was kinda shocked how poorly he did the white lady, you can get way better made ones in the most good hotel bars. I think eggwhite is key to make the drink smoother. Also he did shake it pretty shirtly and did not double strain, you can see al the iceshards on top of the foam. Shake longer, double strain and maybe even use bigger blocks of ice, you will get a way bigger foam, even without using eggwhite and then double strain to controle your diloution. For 1k yen seating price I expected a better made drink, especially those classics with 3 ingreedients will be better if you make them technicly correct. For sth. with 10 different things in it, it won`t matter how you make it at all, everyone can make sth with 10 ingreedients taste good that`s why I was hyped to see him make a classic as signature drink and got disappointed.
I don't know I'm a beer man and let's face it you don't go here for the booze. You come here for the privacy and service. Like me the beer man I can go buy whatever beer at the store and drink that at home right... but wheres the fun in that so let's go out to the bar. So here we are at the bar and the first thing that happens is some skank begging for a drink, so let's say what I always say "you can have one if there is sex involved" and then we will get the "I'm no prostitute" talk, and to that we answer, "sure you are, either you have sex for money or wares no difference".... so when that is over with we can now relax with our beer until the idiot that really like the woman we met before, but don't have the courage to tell her, shows up and tells us "hey you calling here a whore?" so fast as an oiled snake we give him a slap with an open palm over the cheek and before he can attune to what we have done we give him another one over the other cheek and say "keep on walking while you still have the use of your leg" now our beer has gone flat and as we leave and step in someone's vomit pool outside we start to wonder if we wouldn't have been better of just having our beer at home..... So yeah I'll take a mediocre White Lady, privacy and ace service over a good beer at any ordinary bar...

It's clear that people here don't understand there's quite a significant difference to how bars in Japan operate vs a bar in a western country. Clearly not as knowledgeable in alcohol as they'd like you to believe with their comments.
as with any city, the most famous places rarely deliver on the expectation and hype. Having been to most of the famous cocktail bars here in NYC, I can honestly say, It's not worth the price at most places..there are a few though that deserve the praise. 🙌

He might like the texture of the little ice shards in the drink, but not chilling the glass beforehand is unacceptable in my opinion. Maybe he just thought is wasn't necessary for the demonstration.
Look at 2:13 there are fog on the glass.I thought the martini glass was frozen but it took out too early and wait for video shooting. Because he use hard shake that the technique hope keep more bubble in cocktail making white lady so he didn't double strain the cocktail
One of the best bars I've ever visited is Juuz bar in George, South Africa. They don't market themselves out much, but they make the most amazing drinks. Can't recommend them enough

I'd suggest visiting "Hibiya bar whisky-s" in ginza if you are a whisky fan. 3 Chome-3-9 Ginza, Chuo City, Tokyo 104-0061. Great selection of suntory brands (yamazakis, hibikis, Hakushus) along with bowmores, macallans, glenfiddich and more.
Hmmm but all the books I own and all the pro bartenders use a doublestrainer and eggwhite for a white lady. If you care about taste, ice shards are not supposed to be in a streight up served drink in my opinion. But hey everyone can do it the way he wants. I was just curious because he won several competitions and does not use a doublestrainer for this type of drink thats all :)
Try these: 26East Bar in Vienna Austria, Artesian and Kwant in London England and Schuhmanns in Munich Bavaria. Good examples of great Bars in the World
I was there the night before this video was uploaded, on the 27th. Fantastic bar with great atmosphere and incredible drinks. Try their Absinthe concoctions.
That has to be the most basic version of a white lady. With no egg-white, this is as plain as it gets. Just look mysterious while shaking and people will fall for that. Just check out versions like the one made by the Educated Barfly, which surpasses this with both technique and presentation.
I was expecting James with another 70s poverty sandwich, but I guess this is an acceptable substitute.

I was going to go here last time but they were closed. Enjoyed Bar Benfiddich while in Tokyo and L'Escamoteur in Kyoto during my vacation. Kampai!

There is a lot of great bars in Tokyo. Unexpectedly, pizzerias are also amazing in Japan. I ate some of the most authentic pizzas there.
