Most often you will fight how you train, and whatever you do in sparring without thinking, is what you will do in the ring. When you get enough fight experience, things slow down and you can actually see things you never noticed before. But you first handful of fights, are going to be all instinct.
Pretty much most gyms you get a private lesson during class training. Which is great. Max 1-3 people who are long term locals and the Thai boy fighters.

All the gyms in Thailand charge around $300-400 a month to train twice a day. Pretty standard pricing for foreigners
