This is another great recipe Andrew! The contrasting colors look beautiful! Im used to doing cauliflower steaks on the stove top but I love it this way- looks like an easy way to grtnthat same carmalization with less work.
I'm glad you explained why you put the kombu in because I just suspected that with all hard beans & pulses that kombu helps to maybe make them more digestible & tender. I may be wrong...but if my memory serves correctly, that's what I learned a long time ago about kombu...that it helps make food more digestible & of course adds some extra mineral content.
Although I didn't explain that part, you are absolutely correct. Kombu does 3 things; adds nutrients, tenderize and adds flavor. Tenderize is the part that you referenced. Kombu as an enzyme that helps break down complex sugars in foods, that ultimately make them less gassy and more digestible for us. ❤️

Beautiful dish! I would love if you did a lentil video. What is the difference between red, brown, green, black and when to use each? What is the difference in cooking? Can any be mashed so they just blend into the dish/sauce and people dont have to deal with the lentil texture? Maybe I'm the only one, but I need lentil help!

I think you are asking because he used "raw cashews". They are not actually raw. They have been cooked once to make them safe to eat. Raw cashews are used for making cashew cream, roasted cashews can be used, but they will not be as creamy after roasting. But might have a bolder cashew taste, so you do you. :)

My nails are normally shorter. Although i could choose to have longer nails because its my body. Considering that, your comment is an odd thing to say to someone. You have no idea if my nails are dirty or not. Also, plenty of women have long fingernails, sometimes with polish on it so you can't even see underneath their nails... Yet, I've never seen or heard anyone comment this about them. You should do better.
