- Whole roasted cauliflower is a delicious, easy recipe (though it takes some time). It's a great way to use discolored or oxidized cauliflower that would otherwise end up in a landfill.

It's super easy - all you need is a whole cauliflower, olive oil, and salt.
Boil your cauliflower for 10 minutes until fork tender. Move it to a cooling rack so all the steam can escape, which takes 20-30 minutes. Coat it in 1 tablespoon of olive oil and place it into a preheated, very hot oven - 450-550 F. After 30-45 minutes, remove it and allow it to cool slightly before serving.

I literally had received an ugly cauliflower yesterday from a food delivery service and this cauliflower is in the oven right now! I am so excited to try!!
Sauce is one quarter cup tahini, 1/3 cup water, one clove of garlic, grated, the juice of one lemon, and salt

Tried this last night but with garlic powder and parmesan put on for the oven stage. Even my vegetable hating husband loved this!

"Give Ugly Produce a Chance" should be a bumper sticker! I was "today years old" when I learned about oxidation on cauliflower. I would always scrape/cut that stuff off thinking it's not good to eat.

I bake mine with chili flakes and Olive oil after baking I then let it sit for about 5 min. Then I squeeze fresh squeezed lemon juice and lightly salt! I also mix it up with broccoli! Enjoy

I am a newbie cook, and remember seeing this recipe some time ago. At the time, I thought I had to light my electric stove with a match so I didn't attempt it. I made it and it was delicious! I mixed Herbs de Provence with good olive oil and brushed the surface; once it cooled off, baked it , and when it came out golden and caramelized, I sliced it and sprinkled fresh Parmesan cheese...it was a hit! It's a great idea. I usually use cauliflower together with stockfish , after having cooked it in water and then add it with olive oil in little pieces of garlic and onion ,then take it to the oven with soja sauce , pepper and piri-piri for around 25 minutes ,180°. This is a recipe from south Europe. You may other kind of common fish instead of codfish and add slices of boiled potatoes to it. Greetings from Portugal in the Algarve.

Do everything like this recipe. After cooling down, you need to mix mayonnaise and shredded parmesam cheese 5-6 oz. and spread it on cauliflower at bake at 370 until golden brown. You will be in heaven when you eat this. People who don't like cauliflower love it this way.

This is delicious, but I like my Cauliflower firm, so I only boil it for 5 mins, the bake it for 15 mins and broil it on low for about 3 mins to get the additional browning. Add parmesan for an added flavor dimension.
Great recipe. A light dusting of paprika adds another layer of complexity and flavor.

My secret when blanching the cauliflower is to add a couple of strips of lemon peel. Voila perfect white cauliflower!

Why do you add a lemon peel? Is it for flavor or does it affect the way the cauliflower cooks?
@@SuperDflower if the cauliflower is a little bit yellow or has some brown spots the lemon peel “blanches” it out to bright white. I don’t notice a difference in taste.

I've been making this for years, as I am not a huge cauli fan, but I can devour an entire head when cooked this way. I love it best in the air fryer so the whole head gets brown. No need to pre-cook it either. Also great with the head brushed with a mayo/dijon blend and sprinkled with your favorite seasoning. Makes a nice crunchy crust on the outside and the inside is soft and creamy. Yummo! You're the first person I've seen do the whole head like I do.

@MizJewels: thank you for mentioning the no need for pre cooking. I hate boiled cauliflower but love to it raw with some mayo+mustard sauce. Am going to try roasting it without pre-boiling.
I wonder though if the boiling in salted water doesn’t give it an extra umph. Maybe I need to try both…

I made this last night along with Chicken Marsala. I must admit, I was skeptical. But it truly was delicious! I usually just roast cauliflower. But this way, it stays very moist on the inside, as well as roasted on the outside. It didn't take as long as I thought it would. I will make this my go to for cauliflower. Thank you for the recipe!

Because of the high temperature of roasting using olive oil you will create trans-fats.
It might be better to use Avocado oil (higher smoke point) or use ghee or butter.
Agreed. I would roast with avocado oil and maybe a little butter or ghee and then reduce heat to 325 and brush with my imported olive oil and cook maybe 2 to 5 minutes. I also want to try steaming the whole head if possible to preserve nutrients. Can’t wait to try.

One of my go to favorites. I like to drizzle it out of the oven with an emulsified vinaigrette with lemon juice, a touch of dijon, and basic EVOO. Great method to transform a basic ingredient from simple to delicious.

I always slice it 1/8 inch thick, mix with oil, garlic, and salt, and bake it on a cookie sheet, stirring occasionally, until it has lots of brown parts. Try it that way, too.

This came out perfectly. I'll experiment with other toppings just for fun, but I also like it just the way it is with olive oil and salt. I had the most amazing cauliflower in Israel that had a tahini-sauce on it which I haven't been able to duplicate. Every time I make cauliflower, it's either too mushy or too undercooked/dry. This technique made the cauliflower picture-perfect. Now I just need to figure out that tahini coating....
oxidized anything, even apples, taste differently. I just peal the oxidized bit off.
the rest is quite well explained. I esspecially loved the fact that you didn't waste time saying what is also written on the vid.
and I agree with you that we should always buy the older produce first. they're awesome for any dish (especially cream soups).
I wanted the recipe diary, so I used melted butter instead of olive oil, and I sprinkled some shredded parmezan on top, as well as herbs and garlic powder.
I will definitely try some green goddess thina to serve with, next time.

I made this and it was awesome.
I was at a restaurant with my husband one night and I decided I would have what they called a Caulilflower steak. Im not a vegetarian but I still love veggies. This was like a half of a head of Cauliflower roasted with some kind of seasoning on it. I was so surprised by how good it was. It came with a chimichurri and hummus on the plate.

Hi Marko. I really enjoyed this, especially because coincidentally I roasted a whole cauliflower tonight… I have never done the boiling step but maybe I’ll try it. I sautéed a can of anchovies and some diced tomatoes and celery in ghee, added a bit of red vermouth, in a saucepan that just fit the whole head and then spread some pesto on for the last 15 minutes in the oven

My mother in law showed me a similar way to cook cauliflower. Par boil it like you did, the once cool down you divide it into its floretts and pass it through egg and flour, then you brown it in a pan with oil and last but not least you squeeze aome fresh lemon juice on it. It is delicious.
