I make great almond milk about once a week thanks to this video. 5 hours is enough soaking time for naturally sweet almond milk. Avoid allowing fermentation. Do not blend the mixture past a slightly warm point. 38 degrees Celsius or 100 degrees Fahrenheit. This is a good point to stop blending. Judging by touch, during blending if you can feel warmth on the Vitamix vessel but it is not too hot to keep touching, that is when you can stop blending the mixture. You want to avoid actually cooking the liquid. Otherwise the resulting almond milk's texture will be a bit slimy. You can improve the texture of the almond milk if you replace one cup of water with a 1.5 cups of ice. This will allow you to blend longer before reaching the 100 Degrees Fahrenheit limit. Warning: If you soak the almonds more than 6 hours at room temperature fermentation will begin. The result will be a sour almond milk. The intensity of the sourness will be stronger the longer the almonds soak. Warning: Do not let the mixture stand. Squeeze out the mixture immediately. Otherwise the mixture will ferment rather quickly. If you allow fermentation, the milk's shelf life will dramatically shorter. It will become undrinkable in as little as 3 days. Even when refrigerated immediately after processing. Made properly and immediately refrigerated, I have had almond milk remain good for as long as 10 days.
Are you able to put your almond milk in tea without it separating? The milk i have made in the past was horrible in tea so have been sticking to shop bought.
Wow!! This is good information! I spent years making almond milk and wondered why it didn't last more than 3 days in the fridge.... now I know! I'll probably give it another shot 😊

I made this exactly as presented in this video, and after straining, I ended up with only 2 cups of milk. Maybe its the camera angle, but your finished product looks like it made more than 3 cups milk.
Thanks for the video :) I took your advice and strained the milk first, then put it back in the blender and added a tsp of vanilla. I can sweeten it on the fly on a per glass basis, depending on what I'm in the mood for at the time. It's easy to make, and clean up is a breeze. The only problem is it makes my throat a bit itchy, but nothing I can't handle-at least I know what nut it is in mixed nuts that usually has that effect on me!

Question: if the Vitamix can liquefy all the fiber from other ingredients (as described in an unrelated Vitamix floor demo), why does it not also liquefy the almond pulp? and if it is able to, e.g. perhaps if left to blend longer, are there other reasons that you would not want to blend the pulp into the milk? Thanks for anyone's thoughts.

Store-bought almond milk is useful, in that you know exactly how many calories per cup you're getting right on the front of the container. I usually go for the 25 calorie almond or cashew milk. I like the idea of making the milk in the Vitamix but it would be much more difficult to know exactly how many calories per cup you're getting.
