How to make pickled plums

  • This is my 21st year making pickled plums, and I've been pickling them every year without fail, so I'm going to show you how to pickle them that I learned from my mother 😊
    ⚠️Here are some things you should be careful about⚠️
    ① Be sure to use coarse salt.
    ② If you want to reduce the salt content to 15% or less, be sure to store the plum vinegar in the refrigerator until it is dried (after that, please also store it in the refrigerator).
    ③ Although the plum vinegar is heat treated, there are differences in the plums used and the storage environment, so what is written is not necessarily guaranteed.
    ④Do not leave heat-treated plum vinegar in the pot for a long time other than letting it cool.
    ⑤ In the video, a stainless steel pot is used, but please note that strong acids may cause discoloration.
    ⑥When heat-treating plum vinegar using red Shiso, bitterness may occur due to the lye. Be careful not to boil it down.
