Lovin' your videos. I'm single & do meals for maybe 2 people. I love sweet potato too. Zucchini is a favorite & I've done spaghetti squash & brussel sprouts in regular oven. Use air fryer to bake sweet potatoes & then season them & make sweet potato pancake batter. Thanks for sharing

In particular I’m thrilled with the rotisserie basket and the super size so that I can do multiple recipes at a time: read wings and tater tots at the same time so they are ready together. On the eggplant Parmesan …For a keto/low carb version, you could use the almond flour but the best breading is equal parts of pork rind panko, grated Parmesan cheese and ground golden flax seed! Soo good for anything breaded!

Veggies never looked so good to me before. I agree with you about the bacon, maple syrup brussels sprouts. I also have a very good recipe for them that adds bacon, chopped onion, and potatoes with butter. It is deee-lish!
Your eggplant bites remind me of the zucchini pizza bites we like - I bake them, but I think the air fryer would work. We season the slices with salt and pepper, then broil them on both sides. Top with sauce, cheese, and mini pep. Back under the broiler till melted. Very good!

Can't you take the rack out of any air fryer to roast vegetables as long as the rack is removable? I bought your cookbook, and it has so many great recipes! Things I never thought of, which to me was the whole point of buying it. After watching so many of your videos I just bought a 6 quart model (I started out with a 2 quart fryer, but it's just too small, even for one person). you're so right - might as well make more food while you're cooking - and you can't really do that in a 2 quart size.

You can cook from frozen! I would just add a couple of minutes until it is warmed through and try lowering the temp to 350 so it doesn't burn as it is thawing during the first couple of minutes. Then bump the heat back up so it roasts.
Frozen ones don't usually get crispy since they have so much water in them. But give it a whirl... depending on the veggies they might crisp if you cook them for quite a bit?
What did you dip the eggplant in please. We call them aubergine in the Uk.. it also appears being someone who has a lot of these in veg dishes, that no need to salt these days , it’s to do with how I they are grown these days. Guess fine either way , thanks. Ice dishes.
Eggplant was an acquired taste for me, but I think the eggplant of my childhood had less flesh and larger seeds in pockets of some kind of substrate with a texture that felt weird to me, so I just found it unpalatable. I was reintroduced to it by a girlfriend in college, and found that I liked it. Answering your questions, I think you used medium-large eggplants, and yes, they look perfect. I look forward to trying your recipe, because it looks a lot faster and easier than the eggplant parmesan recipe I have. And kudos to you on getting your six-year-old to eat eggplant! (And, as usual, she stole the show 😂.)
@@empoweredcooks, update: My wife asked me to pick up a few things from the produce store on my way home from work, and eggplant was one of the more reasonably priced items in the store, so I bought an eggplant and I made those eggplant parmesan bites. Now, I did have to fake the parmesan, because we maintain a kosher home, which means, among other things, no mixing of meat and dairy, including the utensils, and my air fryer is for meat meals only. I didn't have the ingredients used in most recipes for making parmesan substitutes, such as protein powder and nutritional yeast. But I did have a small amount of ground coconut (not sure why we have that, but I thought it would have part of the taste combination I was going for), and a bag of ground flax seed, so I mixed 1/4 cup of each and then added some grated lemon peel to make it a little tangy. I blended that with the other dry ingredients. I looked up how to salt eggplant to draw out excess water, and used that on my eggplant cubes to help keep the breading stay crisp after cooking. I also made smaller cubes than you did because I wanted them crispier. I decided to dredge the cubes in all-purpose flour before the egg wash in hopes of getting the breading to stick better; that was definitely a good move. I cooked my cubes in two batches in the air fryer. I had to shorten the cooking time a bit because I had made smaller cubes, but since I follow your advice and use the shake timer, it was easy to see that coming. I ate one cube as a taste test, and I'd have to give it SIX out of five stars - wow!!! - and that was before the marinara. The fresh-from-the-fryer cubes were delightfully crispy on the outside, creamy on the inside and full of flavor from the spice mixture. I didn't have any cuties around to react like your daughter did in the video, but this recipe is definitely a winner. I think you may have just published the single best way to enjoy eggplant ever!
That is personal preference. I have done it before, some say it affects the cooking. Some say their user manual says NOT to use it. Others think it's toxic. Others do it ALL the time! Ha ha! So you get to form your own opinion on that one! :)
I have the dual blaze and making burger Patties in the basket totally smokes up the house. 360 for 11 minutes. Does anyone else have a smoke problem with this fryer??
@@empoweredcooks you know what worked? This is the dual blaze. I selected broil instead of air fry. Turned off the bottom burner. I used the crisper tray and I flipped it even though it was still cooking the bottom. 😀 thank you for the reply! Love your videos. I guess there is a learning curve with the dual blaze because of the double burners. Hopefully more recipes specific to the blaze come soon. I was afraid to put water below the crisper plate because it seems that would affect the heat flow and prevent cooking. Funny, the blaze I returned cooked burgers without smoking even when it was on the bottom.
I absolutely LOVE your recipes, have been binge-watching for 5 days flat! Adore the kids' comments and contributions very much. Could I ask if they could perhaps answer you not with their mouths stuffed? Most of the time you can't hear what they're saying and it makes the food seem less appetising. I was raised that it is bad manners to talk while chewing food. 🤔
I also bought the smaller one to tide me over when I found out how long it was going to take to get the replacement. It will go into my travel trailer once the new one finally arrives.
I lover her videos but I do feel like she undercooks most of her food. I mean everyone has their own food preferences but no real chef would consider those vegetables truly roasted. An air fryer roasts great but it takes more time than that and you can’t overcrowd them so much but you can overcome the overcrowding some by cooking way longer. That cauliflower at the beginning looked almost boiled and the veggies after that were sautéed at best. Where’s the char, at least a light char or dry outer skin at the very minimum.
Soaking wet veggies into the wrap? (You can see the wet poring down 😢…) And that’s a LOT of oil used in the other veggies… The idea of the airfryer is “no” oil (ok, very little)

Costco in Canada has avocado oil in aerosol cans. Maybe it is available in the UK too?

Try placing a slice of bread or a little water at the bottom of your basket.

In regards to the "cheap" veggie tacos, at my local grocery, a head of cauliflower is $6.99!!!! I don't buy it there!!!

Stuff happens its not her fault that they were recalled. I got my replacement the other day and there is no problem with it.
