Thanks for the recipe! I tried it and bhature came out puffed and yummy. I used all purpose flour because I didn’t have maida. My yogurt was not sour at all so I added left over whey after making paneer instead of water for kneading. All that extra water addition seems to be the key. Even when I felt the dough might be ready, I added a bit more water as you have shown and kneaded. Did this 3 to 4 times. I let the dough rest for 4 hours, though it become softer to touch, it did not rise much. I did not plan to make bhatures immediately, so after 4 hours of resting, I put it in a zip lock bag and froze it. To thaw, I kept it on the counter for 6 hours and then made bhatures as described. Came out beautifully puffed and yum.
I followed this recipe and made my first ever baturas at home and that too on my son's birthday as it is one of his mooost loved favorites and also one of the most missed dish,having been living in a foreign country since the last few years..So my efforts of making these to satisfy his cravings for restaurant style baturas were perfectly met (without yeast that too) Thanks a lot for the video and the smaller details that are very well explained here👍👌
