    That "sauce" we serve on štruklji is actually just breadcrumbs lightly fried in oil or butter. Also, great pronounciation of "kranjska klobasa." I don't think I have ever heard any foreigner pronounce it as well :)

    In that region, "ica" at the end of a word is usually pronounced "eetsah". Hence, potica (poh-teet-sah), Ljubljanica River ( lyoo-blyah-neet-sah) and pljeskavica (plyess-kah-vee-tsah). That's why the pljeskavica vendor kept correcting Allison when she said "ickah". Haha! You guys missed out by not trying potica. You could probably find it if you ever roll through Minnesota or Cleveland. Or next time. 😀

      Potica is widely known to Serbs and Croats in Chicago and Northwest Indiana .My Dad (Serbian) and our other Serbian neighbors would make this during the Christmas holidays.

      I'm sorry but Potica is like Prekmurska gibanica wich they ate at the restaurant protected tradicional slovenian dish or desert. Mostly slovenes make it for the holidays, so that's why they could not tryed it. If someone is looking for potica you could try at the main market of Ljubljana.

    As interesting as tourist find Nutrias, they're considered an invasive species here and have been causing a lot of trouble to the riverbanks. They munch on the roots and stuff, making them less sturdy, so the riverbanks fall apart.
    One of the rivers leading into Ljubljanica is actually having them redone right now with more boulders and dirt to make them sturdier.

    Hi guys!!! Buckwheat is a grain, with a an “earthy” flavour... not bitter (perhaps there was a seasoning or an acidic added to it!?!) it is an acquired taste (love it or hate it) but is delicious in salads & soups (substitute it for rice & quinoa in dishes).... take care!!! 😊

    Alright, I've just binged this series and you guys have earned a sub from a slovenian.
    Some tips for prounciation:
    - Soft R's. I remember reading somewhere that english is very odd in that it uses hard R a lot. Try arching your tongue upwards and make a vibrating sound just behind your front teeth instead of sinking it downwards and making the sound in the back of your throat.
    - Soft L's. It's not that different, just go easy on it and don't growl it with a wide open throat, and again, more from the front of your mouth.
    - In Slovenian, E can be prounced in three different ways: the standard 'ehh', the odd 'uhh', or a sound that I honestly can't say I've ever heard any American pronounce corretly, which pretty much uses the same principle as the soft R mentioned above: try making the sound with the front of your mouth, with the center of your tongue pushed upwards to form a tighter gap and the ends of your lips sort of clenched backwards instead of laying the tongue flat and opening you mouth wide. For example, this sound is used in 'pleskavica' - not 'plehh-skavica'. I suppose you could try pronuncing it as in 'play', but without curving it into the 'ayy' and laying it a bit flatter to make a more 'ehh' style sound.
    - In Slovenian, C is pronouned as 'ts', so sort of momentarily touching your front teeth with your tongue to build up a bit of air, then letting it go through your teeth, and it makes a popping sound, comparable to how you build up a bit of air by momentarily closing your lips to make a P sound.

    Next time you come to Slovenia make sure you visit Postojna cave(Postjnska jama) and Škocjan caves(Škocjanske jame). Amazing underground places of natural beauty! ..and also... Soča river valley..one of the most beautiful rivers in Europe! :)

    Oh! Štrukeljni, žlikrofi, ajda ♡♡♡. The Krajnska goes well with mustard, the Štrukeljni topping is made out of butter and bread crumbs ore flour. Prekmurska(region - head of the chicken) gibanica litteral translation would mean : Over Mura(is a name of a river) movig cake. Woha, gotta go eat :D

    I personally prefer buckwheat over rice,pasta or potatoes as a side dish. And many people in my country-Latvia do as well :) I'm surprised you found it bitter, to me it tastes rather neutral.

    Idk if some's mentioned this already, but the topping/sauce at ~8:58 is just breadcrumbs fried in butter. It's a very common topping here.

    That "sauce" on top of the štruklji isn't really a sauce, it's just a topping made from breadcrumbs. You heat up some butter and fry breadcrumbs on it. Then you pour it onto štruklji (and it's popular on another dish too - cmoki). My family personally puts some sugar mixed with cinnamon on top of the breadcrumbs thing too. I find it delicious. Also, I love buckwheat, especially buckwheat žganci (what you tried was buckwheat kaša). :)

    Štruklji are not dumplings, they are rolls of dough and different filling. Usually filed with cottage cheese, they can be sweet or savory, or with nuts and fruit. And the sauce on top are bread crumbs fried in butter (just melted butter, you put bread crumbs in butter and stir until golden brown)

    Cottage cheese dumpling you can eat all over in Europe.
    Usually they put lemon zest inside,serving with toasted breadcrumbs,hint with powdered sugar and put sour cream on the top.

      There has to be the right amount of sugar in everyting to taste just right, not too much and not too little. All cakes and sweets in the western world are too sweet - that habit of oversweetening and oversalting everything unfortunately is spreading all over the world now. :(

    We eat buckwheat almost everyday in my house. This one might have tasted bitter because of the quality of grain. I've purchased some brands that tasted bitter, and that's why I have a go to brand that has sweeter buckwheat.

    Pronounced Poteetza I'm Slovenian American and that's the first time hearing Po ti ca today :) My Aunt makes this in Toronto all the time. I had to think for a second and was like oh yea!!! Poteetza :)
    The Slovenian American pronouciation is "Luublana" and "Slovania" ....long "A " Mainstream US say Sloveenia...long "E".

    My wife makes Buckwheat pancakes and they are really good,,so if you ever get a chance to try them,I would highly recommend....From Nebraska...

    Nutrias are common in the American South around gulf states. Oh and they're hunted for their meat. Some are kept as pets. But most are being killed off because they're deemed as a nuance.
