I just made chili the other day. I’m from Texas & they don’t put beans in their chili…. But my mamas from Maryland so we did. I use ground beef, pork chorizo, diced onions, tomatoes, tomato paste, Rotel original, jalepeno (in the jar cause I like to add the jalepeno juice), garlic, chili powder, Cumin, oregano, paprika, chicken bouillon & pinto beans. I will definitely try it with the bacon. I’ve used beef ribs too & left over brisket. The brisket was a whole new level!
When I was at Uni, my husband went away to work in Namibia on a scientific project involving springbok, wildebeeste and other antelope for two weeks. In his absence, I cooked up a HUGE pot of chilli and grated a shit load of cheese! Over the 14 days, I used some of the chilli on baked potatoes, then loaded aubergine skins (egg plant), straight forward chilli and nachos, chilli and tortilla lasagne, burritos, enchiladas…. It was amazing how versatile a pot of chilli is and as it matures it just gets better and better!

My secret ingredient is fish sauce. Just a little bit to most dishes gives it a great umami flavor. I don’t know why this works but it’s just adds that “umph..” to dishes.

I use Campbell soups as well! I use it in chili, spaghetti, stews, meatloaf to name a few…and of course for grilled cheese and soup makes me always love it. I probably buy about 12 cans a month or so, we really love it! Call me picky but I will only buy Campbell soup. My daughter recently went shopping and bought a generic can and I pitched a fit. Made her eat it…I love her dearly but don’t mess with my soups! ❤😊
Made it today but with short ribs in the crockpot! OMG. I followed everything except I just browned the short ribs in the bacon fat then threw everything in the crockpot except the beans. I added them during the last hour! SO GOOD!
For someone on a budget, I use my bacon fat only to brown veges. I keep a jar on the stove same as my momma did. I buy triple smoked bacon so my bacon fat is yum, great for popping popcorn. I have also used prunes or prune juice if you like a sweet to balance off hot spices. It gives the chilli a dark rich color.

Some really great ideas for alterations I can make. I actually use shredded freeze-dried pinto and black beans in my chili. The ingredients: the beans, and salt. No preservatives needed. And they hydrate and thicken very nicely in the broth etc. I often use habanero salsa for the spice factor, but I also love pickled jalapenos!
Im still finishing up the chicken chilli. My son loves it. He hates tomatoes so that quickly became his favorite. He called his grandparents to tell them about your chilli and your youtube channel. I cant wait to try this one next.

I like mine a little bit hotter, so I usually add Tabasco, Red Pepper flakes, and Serrano peppers in addition to the canned Chipotle peppers, and substitute medium to hot Salsa for the fire roasted tomatoes. I also throw in a couple of Cinnamon Sticks, two or three Bay Leaves, a couple of tablespoons of Dark Brown Sugar, and a good splash of Liquid Smoke. In addition to the beef stock, I also deglaze with about a cup or so of dry Red Wine. Finally; instead of the tomato soup, I like to crush a large can of Cento San Marzano Tomatoes, and whenever I need to add more liquid, (because I simmer the chili for a long time) I cut it with those small 6 ounce cans of V-8.

I always add a can of drained garbanzo beans, in addition to the red and black kidney beans. They soak up the flavor and the added texture is amazing!!!

If I find what I'm eating is a little too hot, especially w/ chili, iced tea is great to add w/ it. I like to use the Chili Cheese Flavored Fritos.

Personally I love bacon so I used the entire pack and also added 4 leaks in addition to the onions and doubled up on the tomato paste.. HOLY COW.... YUM!!! Just a note, In your photo of ingredients you show green onions yet you don't mention them while cooking. Thank you for this recipe!!!
Your chili is almost identical to mine, except I usually take something like a Reaper and blend it down really well. I also add the darkest chocolate I can find. Chopping up some steak is also a good move!

Serve it Hawaii or Cincinnati style on spaghetti pasta. I'm making pot tomorrow but using the America's Test Kitchen recipe. I've used it several times and turns out very well. It's a smokier type of chili. It has pretty much all the same ingredients except the bacon and bell peppers. It involves a homemade chili spice blend that's pretty good although I don't toast pablanos anymore. I use a two dried chili powders (pasilla & california) in their place and beer for the liquid. It doesn't call for cinnamon either. That could be an interesting addition. I drop in a few chunks of 70%-80% cacao also at the end. which reminds me I have to get some.
Idk anything abt the Hawaii, but the Cincinnati spaghetti with the chili over it I find is blander than the full flavored Chili Mac, which my family so loves. Chili Mac is served over spaghetti, topped w/ your favorite options of heated kidney beans, raw onions, shredded cheese, and great served w/ club crackers. And iced tea is great if the chili is on the hotter side.
Matt is it necessary when chopping onion once you cut leaving the root you have to cut parallel with your cutting board into the onion towards the route? Will the layers of the onion eliminate that particular step once the vertical cuts have been made?
I would add some macaroni elbows for some chili mac. Looks good regardless, i would definitely try this recipe, which looks great, and i bet it tastes even better. Cant wait to give it a try. I love and will try some of the tips included like the tomato soup and the Chipotle pepper's. I dont like my chili hot either, no 5 alarm chili for me im more of a 3 alarm guy 😂. Tortillas do go well with Chilie too. Helps to easily clean the bowl as you finish as well.

I used tomato soup when I’m making stuffed peppers not the main ingredient, but I like to add it. Note it’s a bit sweet
