It’s good for you to DIY visas. I did DIY some of my own too. But that’s based on hours upon hours of research to make an informed decision. It’s by no means “easy” and “straightforward”. Without attention to detail you are bound to fail.
There’s a reason why migration agent as a profession exists. You may not follow all the rules changes frantically, and maybe the one you miss can cost you the visa. Professionals do this all the time so they know more about visas naturally.

Usually if you listen enough of their youtube or podcast, you may notice whether they have experienced or not.
Many never appears on youtube, then you are right... no one knows how experience and professional they are, then perhaps not to choose them
