Looks delicious - in Guyana we have something similar - “egg ball” - it’s a whole egg covered with seasoned mashed cassava or potato. Deep fried and served a spicy mango or tamarind chutney.

How did you boil the potatoes, which potatoes are good to use

To boil potatoes peel and cut them into quarters. Then immerse them in water add salt to taste and cook them over medium heat till a knife inserted in the centre effortlessly slips right through. I have used yellow flesh potatoes. Enjoy!
