    Thank you!! That's awesome! As a lifetime Bulgarian expat I have been looking for a recipe to recreate those delicious kebapcheta and kiufteta that bring me so many memories of my childhood!! I will try this recipe as soon as possible :D

    You shouldn't put a bred (especially soaked with milk) in the meatballs, you think to grill on a cast iron or on a girl! That's why they "crack" until grilling. If you make a mistake to put a milk, it will burn from the high temperature and the taste will be disgusting! My advise is, mix the chopped meat with the salt, black pepper and cumin, and add 10% water(or soda). Mix it well and leave it for a one night in fridge. Then, exactly before grilling add an onion in each kufte and glaze it with some water before you put on the grill. Good luck!

    People, first of all, in this quantity, the onion and the bread will be searched with an electron microscope in the meatballs! And secondly, you made two mistakes when baking. First, I think you put too many meatballs in the pan and with that you lowered the temperature a bit, and then you rushed to flip them when they weren't ready to flip and that's why they looked like the ducks pulled them.... Otherwise, I wish you a lot of success in Bulgaria and with our national cuisine!

    Dude, the shape is all wrong. Ask someone how to make a proper kebabche. It must be a long tube of meat that is not too thick. Making it by hand is not quite possible. Some people use a sheet of nylon. They are putting the meat in it, and they are making a roll.

    I’m sorry but this is terrible way of presenting such a staple dish from the Bulgarian cuisine. Please do not do any more Bulgarian recipes. Kepabche and kyufte have never looked more sad and depressed.
