you do know adding the hickory after the meat has caramelized does nothing for the meat, right? let alone there isn't enough cook time at those temps at all?

That is oven roasted chicken thighs. Once you put a lid on and are not cooking over the coals, it is not true rotisserie cooking. True rotisserie cooking is lid off and over open coals. You get the magical flavor from some of the drips of meat juice landing on the hot coals and having that magical smoke flavor come back up over the meat. You don't get that when the the meat juice drips into a water pan.
