    Last time I smoked chicken, I got a pack of drumsticks, (my grandfather's favorite) and shook them in a bag with seasoning, and marinaded them in the seasoning and their own juices in the fridge for a day or so. Smoked them for hours at 180°. Friend of mine recommended 225° for a juicier cook. Looking at chicken thighs due to higher fat content.

      We were confused too reward it multiple times because it comes off the masterbuilt. Or it seemed that way with the foil

    You are always turning out great food! I made this last week using your sweet rub and whiskey peach sauce. It was amazing. I used the sear box to caramelize the sauce. Didn’t think to use the oil but will next time time.

    Followed the recipe and cooked these on my pit boss pro pellet smoker with competion blend pellets. Turned out fantastic! Whe had 7 theighs and only sauced four. The dry rub ones ended up fantastic also.

    Dry brining works too for crispy skin if you don't want to sauce them.
    Applewood on Weber kettle and they come out great.

    I'm anxious to try this. Question: Why not place them on a wire cooking racking during prep? The surface of the chicken would remain undisturbed after applying the rub. Just a thought.

    I do a very similar take on this for my meal prep. Skinless thighs, they get three kinds of rub, cooked somewhat hot and fast on a kettle with vortex accessory, they're sauce at 30 mins done in an hour. Great work Suzy :)

    Never even thought about checking the sauces I use for liquid smoke! Probably why I sometimes get over powered by the smoke flavors and other times it's perfect.

    hey Suzy thanks for all your help in every meat...through all the videos you don't have an alternative for no sugar people. Keto or diabetic need a no sugar rub. would love to buy from your store but the hardest thing to find is no sugar rubs. thanks again Suzy and Todd

    This works with any rub or spices, personally I have used it to make jerk chicken. Minus the spray because jerk already has oil.
    45 mins check temp. 160-165, then crank it up to 400 for 5. Let rest for 15-20 mins

    Its all about the rotisserie flat basket set up. I've done it this way on a kettle and gas grill. Honestly the gas grill works best at about 325 indirect heat.

    The skin was crispy enough, but Marina thinks the juicy, smoky flavor is out of this world. Next time, I'll use some spray butter rather than cooking oil. I am in love with your website.

    I make these with one difference. I smoke a jalapeno with the chicken then before I add the bbq, I take the jalapeno and blend it up with some peach preserves. I then add that to my bbq sauce for the chicken. It works great on ribs as well.

    I must say I watch a lot of barbecue channels and I'm inclined to believe this is the best barbecue channel bar none !! I base my observation on the amount of detail you get into such as cooking to 175 degrees, applying the rub with spray,and so forth.Your barbecue is easy to follow.Thank you so much for sharing your expertise and a shout out to Tod.
    In last place is Barbecue Pit Boys, a real nice bunch of dedicated guys,however they sadly are not on your level. Too rudimentary

    Looks great!!! Looks like I got the same smoker 36” SGX sometimes I see tin foil on the drip tray didn’t want to use because I didn’t want to cover vents! What do you recommend!! Tasty!!!

      The only function of the vents is to allow direct access to the firepot for the slide and grill feature. Covering them up won't do anything to change the cook unless you're utilizing that feature.

      Add a little bit more brown sugar to it! That might help.

    First time i made chicken this way, my wife thought it was undercoocked. Now she is smiling when seeing that color, because she likes the smokey flavor.

    Do you brine your chicken when u cook Chicken thighs on the smoker .and do u use Season wood . They use seasonwood when you're in charcoal Or do you Royal Oak for what I use

    Thank you so much for this recipe! It was an absolute hit and chicken thighs came out very juicy. My only complaint is my pellet grill just doesn't seem to give the smoke flavor I'm looking for. I see the smoke color but can't taste the smoke flavor of the pellets..

      Try Bear Mountain pellets. Used to use Pit Boss pellets and had the same issue.

    I have the SAME EXACT grill but am going crazy trying to get biye thru skin.
    Are you saying all I need to do is spray with oil b4 and after applying rub?

      Yes! Spraying them mid-cook can help as well.
