If you had used regular sugar bead sugar, then u would probably have kept more of the neon color, because there is no brown honey diluting it. Maybe give it a other shot if u like the geberal taste :)
Nice job, i have a question, why do we add clarifier in the presence of sediment, shake it and let it rest. Wouldn't it be more effective if we siphoned first, get rid of already sat down sediment and then added our clarifier?

The main one is betanite. It just make sure all the stuff that clouds up the product drops go the bottom so it is clear sooner
If you're in the east coast look into eastern white pine tea. See if you can forment that with honey.

It’s a stupid Idea but lactose is a sugar… if you could somehow prevent it from becoming sour you could make milk wine. Oh god no it sounds Terrible
