If you are in the US you can go to a Latin grocery store ask the for Milanesa meat at the meat counter. They have it cut thin like it is in the video. They are usually pretty large thin steaks that you can trim to fit your pan. If you are in Spain, per se, they will also have them in the meat counter or tell them you are making a Cachopo and ask if they can cut the Chuleton very thin. They know what it is and how to cut it.
