    look at the rich, dark color of the meat. Starting with good quality product is more than half the battle. Here in Pennsylvania there's an Amish bacon producer who makes a "black" bacon - it's finished with coffee grounds and it's black as night, and it fries up soooooo gooooooood!
    And save everybit of the fat you trim off for adding to your beans, soups and other refogados!

      @@jimminyjemimah these fridges are different. Temp 2 -14 C, a good ventilator to control humidity. Also, very often there’s an UV lamp

    Beautiful. I do a two week bacon shoulder in a similar way, through with different seasonings. Once youve tried homemade , youll never go back. Its also about 40% cheaper.

    Parei pra assistir aí vídeo por que sou curioso mas aí me veio uma lembrança, eu fui no mercado com um amigo uma vez e vi ele comprar um frango pequeno embalado a vácuo e defumado, eu nunca comi, ele disse que era muito bom, ficou na minha cabeça de comprar para provar e eu nunca fiz isso rsrs.

    интересный рецепт! но можно проще обколоть рассолом и за 7 дней просолилось бы !! ваш очень сложный ,но не сомневаюсь что очень вкусный !!!!!!!👍👍👍👍

      Просолиться то да! Но букет аромата специй не успеет взять за неделю. Тут 21-30 дней идеально.

      @@АлексейН-и5ц я посолочную смесь готовлю . И иньектирую ей ,как в промке ! Все гуд получается . А солить мес мясо с специями не есть хорошо, может закиснуть в 80% случаев!!!!!!!

      Can I ask how long this can be stored for once the cure is complete, I love the recipe but would not be able to eat so much in a short period of time, so would want it to last a few weeks.

    That looks amazing. It's flavor and texture is more like a cooked piece or a cured piece ? I saw you cut it quite thick for a curated meat, but quite thin for a cooked one.

      The taste is somewhere between cured ham and cooked ham. A little sweet and very little bitter from the beer, very good!

      There are many styles like German black forest and Westphalian ham, Virginia country ham (even a more prestigiousone would be Smithfield Virginia ham), Scotch ham, French Bayonne and Gammon, Irish ham, Canadian bacon, York ham, maple ham, honey ham, cooked ham, boiled ham, you'll also see the ham shredded in whole hog BBQ in the South Carolina.
      I'm guessing as an Argentinian you're used to Italian style and Spanish style hams like Prosciutto, Prosciutto Cotto, Speck, Culatello, Serrano, and Iberico.
