Gallaghers in NYC always seemed to have that hard rough server there. I always alone did not care and just wanted a steak dry aged.
The best small place Keene's NYC know for Mutton yet very good steaks. Old School Class but nice staff.

Does anyone know how the steaks are cooked, i dont see any grill marks so im guessing they are pan fried?

The steaks are grilled and roasted with the steak plate.

There are many videos of the kitchen. They use high temperature 1400° broilers (called salamanders in the restaurant industry). The steak is seasoned only with salt and then broiled to a rare doneness. At that point it is taken out and placed on the serving plate where the steak is sliced for service (this is so taboo amongst the standards but they do it anyway, lol) and then dressed with melted butter and placed back in the broiler until medium rare. It is then immediately sent to the table.

I know it's available in many grocery stores (refrigerated section near the meats.) I really enjoy it and has a bit of a horseradish/cocktail sauce taste to it.

No to the cubes of butter, that is cheap. Should be whipped butter, if you want to be this expensive.

Hispanic and blacks, make sure you tip appropriately, most people think you are cheap as f***. Just prove them wrong. Tip correctly. That would be at least 20%.

I went there for the first time and the steak was ok at best. The spinach was the quality you expect at a nursing home and the bread was served cold. Don’t bother going.
