I made these last week & WOW! They were so delicious! Don't just take my word for it, but take the word of a 4 year old, who ate two of them (no fussing, and was very happy to eat them). And the rest of the crew loved them too! Thanks for this delicious recipe!
I just used the boxed mix to use up some rigotta I had left over. Egg, oil, vanilla, half the milk, glop of rigotta, for the wet ingredients. Added like 4/5 the usual amount of mix. Was thick, so started slowly adding milk 'til it got to the right consistency. Nom-nom-nom.
I worked at a maple syrup farm as a kid and ate way too much real maple syrup candy so now I only like Mrs Buttersworth ! Those pancakes look amazing!!

That's just the way I like my pancakes.. browned, fluffy, with powdered sugar, butter and maple syrup. No fruit, whipped cream or weird flavored syrups. Great job Steve.

This is a wonderful video. I particularly like the beating the whites. I will admit that I am fanatic about cast iron (and a flat griddle version) which is truly "non stick" if used properly. Homemade ricotta is wonderful (I enjoy a subtle grate of nutmeg for warmth instead of flavor) but I skim some early in the draining process for wetter applications and leave the rest for drier applications.
I am definitely gonna try this recipe & your process of preparing the ingredients, but I’m gonna see if it can look & be as good when I modify it to make it low carb/keto. I already have a keto pancake recipe I’ve created but I really like the idea of the ricotta & how you prepared & combined all the ingredients. Very nice video 👍🏻

I did not add the syrup to the ricotta, to taste. these were satisfying and yummy:)and sweet enough without the syrup, just me. I froze the batter and will probably gift it...try it, it is worth it!!!!!

Sometimes when I go to K-Mart Grill I get the roast beef with mashed potatoes and gravy. It does not taste good, but it is tradition.
Try adding a tiny bit of lemon juice in the batter. Not much, a tablespoon at the most.
My Pyrex measurement markings are faded, too. I don't put my new one in the dishwasher (as I think that's what wore the lettering off the old one. :P
