Sour cream I buy very rarely and in the smallest container bec it is so rich. A little schmear inside a steak burrito, as a dressing for cucumber and onion salad, a spoonful or two added to yogurt based tzaziki sauce or in Hungarian thick crepes. I find ways to use it up since it's too good to let spoil in the fridge.

It's a rainy Saturday morning and decided to give this a go following your recipe to the letter. Initially I was skeptical about the amount of flour called for compared to the liquid and I was correct. Doing so resulted in a dough ball instead of batter. I added more buttermilk (1/4 to 1/3 C, not sure as I just poured straight from the carton) until I got something that somewhat resembled yours. After that save it went fine. The result is restaurant pancakes. You know, the ones that can absorb a bottle of syrup and still hold more. If that's what a person likes this will do it with some effort. I'm not being insulting or dismissive of your fine efforts, but this is similar to what they serve at Ruby's and IHOP etc. Nonetheless, thanks for sharing this as it was good to try it.
I made these this morning and had similar issues with the batter - too thick and chunky instead of the consistency I’m used to. The thick consistency made it difficult for them to spread out once the batter hit the griddle, and I never saw the air bubbles coming through the help indicate when to flip. Regarding measurements, I followed everything closely and measured out dry vs wet ingredients based on the recipe. Might have been the use of only one egg/egg white? The sour cream I used tends to be a little on the thicker side as well (used Daisy Sour Cream) which could have contributed. The end result in terms of density was good - fluffy, tall pancakes with the right amount of moisture. Taste wise, I noticed a little bit of baking powder/soda aftertaste. I love your videos and appreciate what you do, so this isn’t meant to be negative. Just trying to provide some feedback so everyone can have great results. Cheers!!!

We use yogurt here, that's the buttermilk, and ye drink the leftover pack as it's good for your gut biome or drink it with a burek with cheese or whatever similar you have there idk. It's such a waste to think of the pack as nothing but a component, you put it to use by drinking it like the medicine it is, same for sour cream.
They look really good! Just doing some research on baking powder and baking soda. Apparently if you have an acid in a recipe then you don’t really need baking powder. Have you ever heard that and have you ever tried omitting baking powder in this recipe?

This is modified from a famous recipe and both recipes, one of them a James Bears recipe, and since I’m not a baking pro, I just modified the two to create this one using the same ingredients. I do believe it’s for the rise, but like I don’t know the real science. I hope down the road I’ll be better suited to answer stuff like this.

make a berry compote to put on top instead. Super good and no maple syrup needed. Still gives it that syrupy/saucy topping.
