The meatball is SO good, I had been looking for the perfect meatball recipe and tried different panades, which never accomplished my goal for a crispy yet moist meatball that wasn’t too soft. The ricotta is UNRIVALED lol seriously delicious and exactly the texture I wanted without compromising moistness! The sauce is simple but delicious, and the bun with the meatball is such a wonderful texture. Like the perfect burger lol The best part is ricotta, that mixes into the sauce when applied on the sub, the texture is truly delicious! I just made this recipe tonight and I want to say that the meatballs really do turn out fantastic. The mixing with the egg and meat and then the slurry really makes a consistency that fries up really well and holds together, but they were still so airy and not dense at all for meatballs. I did make one small tweak to the recipe after tasting the whipped ricotta. I added a little over a tablespoon and a half of Tallarico's hot hoagie spread to the whipped ricotta and that little bit of vinegar tang plus the peppers really took these sliders to the moon. Really well executed and thought out recipe. Will make again.
Quick question about the Roman pasta series. I tried the all'amatriciana recipe. It was my first time ever cooking/ eating pancetta. The smell was extremely pungent. Is that normal for pancetta or did the store sell me something else? Maybe it was pancetta that went bad or something. I'm just trying to figure out why it smelled so bad.
@@dagnabit27851 I had the same experience. I don't eat pork much so pancetta and guanciale were too pungent for me. I sub for bacon. not traditional by any means but more palatable to me
I love how you modify your existing recipes without having to reinvent them (and not confusing the viewer); your meatball recipe is a classic example. CONSISTENCY👍🏾
I made these for dinner last night and also made your delicious Everyday Tomato Sauce...followed recipe with only one small change which was adding a little fine sugar to make the tomato taste less acidic as I was taught when living in Rome. I made everything in the morning up to the point that the meatballs were browned and put into the sauce. Then put in the fridge for a few hours and put the meatballs and sauce in the covered pan to cook through for 30 mins whilst I boiled the water and cooked thick spaghett al dente. Then moved the meatballs to a covered dish and finished the pasta in the sauce. Served with a Caesar Salad (home made dressing of course!) and everyone has asked for this to go on rotation for Sunday night dinner

We’re doing a buffet for Christmas this year. Everyone brings their specialty dish. Food will be all over the place. I excel at soup, but I think I’ll make your meatballs and do meatball subs. I’ll do a test run beforehand. I’ll likely have to at least double the recipe, maybe triple it. I’ve made my meatballs with a mixture of beef and Italian sausage for several recipes, or a mixture of pork and beef for others. Occasionally I use all ground beef. Never used ricotta. I’ll need the meat to be firm so I’ll have to play with the proportions. They look terrific and I’m sure taste even better. Thank you.

For flipping go Asian style and use two short wood skewers. Best way to flip anything roundish. Great vid, I cook your recipes all the time.
