    I feel like my mom makes super untraditional lumpia too, but for different reasons. She uses beef, carrots, green beans, & cabbage, along with plenty of oyster sauce, garlic and brown sugar, and cooks that mixture first. Then she uses a super thin, circular, Filipino brand of lumpia wrapper & tightly wraps each one like a burrito. We don’t eat lumpia often and I’ve never had any other lumpia where the filling was cooked beforehand, but everyone LOVES her lumpia.

      My mom also cooks the filling beforehand! I think it's because she worries that it won't be cooked at the end or to remove some of the fats (she likes to at least try to be healthier😩)

    • @akhira_m
      @akhira_m 3 ปีที่แล้ว

      @@square3453 I don’t think so since there are not mung bean sprouts. My mom has just never liked the look or texture of raw lumpia filling

    • @akhira_m
      @akhira_m 3 ปีที่แล้ว +3

      @@mariematthews7571 that’s the first time I’ve heard of someone else doing it! My mom is keen on making hers healthier too. She collects all the fat from the beef, making it less greasy, & even puts a lot more veggies than typical lumpia. I’d say the meat to veggie ration is 1:3. I can’t say I know a lot of Filipinos who make lumpia that way, I prefer it bc easier on the stomach

    My white dad is a picky eater so whenever him, my filipino mom and I would make lumpia, it'd just have ground turkey, sliced carrots and some garlic. However we'd always try to make sure to get the best egg roll wraps at an Asian market because if you get the wrong ones, it just wouldn't either taste the same or they wouldn't be crunchy enough when you fry it. I always loved having it that way when I was young because I was also very picky and still am and I would rarely eat my filipino grandma's lumpia. I still love them the picky way, but now that I'm older, I don't mind what's in my grandma's lumpia and appreciate all the ingredients in her lumpia. I'm still picky about certain dishes like pancit, but I'm so happy I can eat her lumpia without complaints. That's what I love about Filipino culture. You're allowed to experiment. In my family, as long as you try it or you find a way that you can like it, we embrace you in our culture and appreciate you.

    This particular recipe in this video is almost exactly how my grandma made it.
    She was visiting us one time and I attempted to make lumpia myself, I already had all the ingredients laid out and prepared and then she looked at me and asked me what I was doing, 😆, and innocent me said "I'm making lumpia."
    Then she told me, 'it's okay I'll just make it."
    I had the shrimp out, but I wasn't going to put it in the lumpia. I was just going to make it sauteed with butter on its own as a side dish to go along with the Lumpia.
    My grandma's and proceeds to chop up the shrimp and add the shrimp to the lumpia mixture along with some diced chicken.
    I was so surprised because she was a pro at it and it didn't even take long.
    It would have taken me several hours!!
    Love my Nanay!

    Let me make a suggestion. Add cornstarch to the filling mixture then fry the lumpia whole first then when it's like 70% done, take it out of the oil then cut them in half and place them back in the oil.
    This prevents meat from sipping out from the wrappers and tainting the oil with meat and vegetables. This is why your lumpia looked messy and a little bit "dirty" for the lack of better terms in this video.

    • @cherylcarlos6171
      @cherylcarlos6171 3 ปีที่แล้ว +1

      Nothing wrong with her lumpia. So much ma arte with your suggestions. Anyway, why add unnecessary filler like cornstarch to your filling? Yours may look nicer but I doubt the taste or texture with gummy cornstarch.

    A good base recipe please? There's a crapton on the net. Preferably one with one or extremely low salt as my mil is just out of the hospital/rehab after nearly dying and is under a STRICT no/ low salt diet. MUST stay UNDER 2000mg a day. So I can make a batch for her and a few of our neighbour's. The place we live is all elderly or disabled so there's lots of people on restricted diets and she runs a lot of the social activities. I'd like to make this with some dips. Do a small batch without the shrimp for ppl allergic( my Nana developed an allergy to shrimp late in life(late 60s?)). A base recipe for spice to veggie to meat ratios would be great......I saw some sweet versions mentioned as well...that might be fun too.

    I've always hated the paste texture or mushy texture of lumpia, but I do love that one variation of lumpia where you add tofu and other vegetables and just not turn it into a mush. For me it gives off more of a crunchy texture and it's very good as you usually use vinegar as a sort of condiment. But for the Lumpia shown in this video iirc you use ketchup for it
