📝 Ingredients:
• 1 lb (450g) penne pasta
• 150g (5 oz) bacon, cooked to your desired crispiness
• 1 red onion, diced
• 4 garlic cloves, minced
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp chili flakes
• 1 can (400g) diced tomatoes
• 2 cups (500g) tomato passata
• 1 cup (150g) black olives
• Olive oil, for drizzling
• Fresh parsley, chopped (for garnish)
• Grated cheese (optional, for serving)
• Crusty bread (optional, for serving)
🍽️ Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil and cook 1 lb (450g) penne pasta according to package instructions until al dente. Reserve some pasta water, drain, and set the pasta aside.
2. Fry the Bacon:
In the meantime, heat a skillet over medium heat. Add 150g (5 oz) of bacon and cook until crispy or to your preferred texture. Remove the bacon from the skillet and set aside on a paper towel to drain.
3. Sauté the Aromatics:
In the same skillet with the bacon fat, add 1 diced red onion and 4 minced garlic cloves. Sauté for 3-4 minutes until softened and fragrant.
4. Season and Simmer:
Season the onions and garlic with 1 tsp salt, 1 tsp black pepper, and 1 tsp chili flakes. Stir in 1 can (400g) of diced tomatoes and 2 cups (500g) of tomato passata. Let the sauce simmer on low heat for 8-10 minutes until thickened.
5. Combine Ingredients:
Add the crispy bacon back into the skillet and mix well with the sauce. Add the cooked penne pasta to the skillet, along with a small amount of reserved pasta water to loosen the sauce. Stir everything together until the pasta is fully coated.
6. Add Olives and Final Touches:
Mix in 1 cup (150g) of black olives. Drizzle a bit of olive oil over the pasta for extra richness. Garnish with freshly chopped parsley and additional black pepper. Add grated cheese if desired.
7. Serve:
Serve the Tomato and Bacon Penne hot, with a side of crusty bread for dipping. Enjoy this comforting and flavorful meal!
Tips:
• For a creamier sauce, stir in a splash of heavy cream or a dollop of ricotta cheese before serving.
• If you prefer a spicy kick, feel free to add extra chili flakes
