It's fine perfectly fine as long as you're quick about it. The Leidenfrost effect will create tiny air bubble around your hand for a short amount of time, keeping the liquid nitrogen from actually touching skin.

Leidenfrost effect only works for a few seconds, till the temperature difference isn't as crazy
The leidenfrost effect slows the freezing process, and is why it boils when he pours it into the bowl.
Notice that after a while it stops boiling but it's still super cold (enough to start boiling again when he puts the phone back in).
But it only slows it. If he kept his hand in the Nitrogen for just a second longer, he'd get frostbite.
A number of minutes, and his hand would be frozen solid and would shatter on impact. After being frozen, if thawed without breaking, it would be utterly useless, and need to be amputated.

You have to have a special thermos to transport it and it evaporates constantly in room temperature so sometimes you run out. If you put it in a normal thermos it will explode.

Its the leidenfrost effect, around his hand and the liquid nitrogen is gas because of the heat differences but that effect stops after 2-3 secs.
You can mostly see that effect when you put water on a very hot surface
