My two additions: half a red bell pepper (peeled and fine dice) - adds a nice little texture, color and sweetness hit. Plus I zest half the lemon prior to juicing

You are correct! Never stop experimenting in the kitchen. I am in my 50s and consider myself to be an accomplished home cook. But there are some techniques that I have avoided - such as deep frying, for most of my life. Last week, I finally made a good effort and was satisfied with the results of my stuffed, breaded and fried risotto balls. (Now, to open that jar of capers that is hiding in my pantry.)

The easiest way to make Mayo imo is yo use a jar or something similar and indeed hand blender, just a yolk ( mustard, etc) on the bottom, oil and from the bottom up blend everything, it never separated so far. Mayo in 15 seconds. I use refined sunflower oil, German mustard, called “delikates” here, sometimes the one with tarragon , and some diluted alcohol vinegar and/or lemon juice, and a touch of water

Why do you add the mustard later? I’ve always seen it and followed where it’s used at the beginning and helps with the emulsification. Even a splash a vinegar.

This is a traditional tartar sauce although the lemon needs to be pickled aswell !!
    Trust me!
I'm a chef and the difference between fresh and pickled lemons in tartar sauce truly makes all the difference
If you're seeking the tartar sauce that you experienced at a good restaurant? the flavours your craving? is the pickled lemon 💯
It takes months to pickle ya see, and its not a very common off the shelf item so lot's of restaurants and fish shops etc go for fresh lemon and it ain't the same ( only the really good places go the extra mile)
    The pickled lemon rind!!!!
I should off stipulated that, sorry... don't pickle the whole lemon! Just the rind, and cut it up fine.
It's almost like shaving the rind but there's something about the pickling that takes it to another level
If you want to impress? start picklen
Side note... Mayo based sauces like tartar, ceasors aoli etc need atleast 5 hrs to marinate in the flavours for the magic to happen
So don't whip up your sauce and serve it straight away, heaps of people do that and it's a big fail, it's mayo with random flavours at that stage, not a sauce yet ( stir/fold regularly)
Theres no such thing as a quick mayo, aoli, ceasor dressing etc, and it's warm when freshly whipped, needs chilling ( good things take time)
    Hope this helps
    God bless
