    *Afterthoughts & Addenda*
*Comparing it to meat* - Throughout this video, I compared this product to pulled pork _because that is exactly how the product positions itself._ It is not unfair to review a product in the exact context it is pitched (indeed, I would say it would be unfair to do otherwise). tropicalsunfoods.com/products/bbq-jackfruit

I don't think it's unfair, but I also don't think you've used Jackfruit ideally. I would buy a can of unseasoned jackfruit, marinade it myself, and roast it for a while in a pan instead of just warming it up in a microwave. I often use it in burritos, and I've also done vegan goose for vegan friends with it. Not all THAT meat-like (I think, can't remember meat well enough) but a really good thing on its own

It really needs to by dry fried in a non-stick pan (perhaps with the tiniest amount of oil). Done carefully the sugars in the sauce caramelise and slightly burn. It tastes more savoury and sticky and is a vast improvement.

I´ve used it before: fry it up to get rid of the wateriness and it´s quite nice. Useless as a meat substitute nutritionally but the texture ends up nice and the taste is whatever you put with it. (Green jackfruit on its own is kind of sweet and generally fruity but after thorough rinsing its just a bland canvas.)

If you were not paying attention to what was what on your plate it was hard to tell which was pulled pork or pulled jack fruit. It was actually really good. If it wasn't so expensive to buy fresh I'd love to try making it from scratch with my own sauces.

Thank you for addressing a meat substitute as something that doesn't have to replicate meat entirely, to the point of fooling people. I am a lifelong vegetarian and to me wanting to replicate meat exactly is not a desirable objective. I like being able to eat food that I don't normally get to, so the stand in description is spot on.

I think the biggest scourge in vegetarian and vegan cooking is the "meat substitute." Anyone going vegetarian or vegan and trying to find a "meat substitute" is going about it the wrong way and will rapidly fail when they find out that there are no (or at the least, no lightly-processed) "meat substitutes" that even come close.
I think the closest thing I've had has been the vegan-fish-nuggets that Whole Foods serves on their buffet. It tastes absolutely *nothing* like fish, but is a spot-on chicken nugget.

    • @kyle0091000

Been a vegetarian my whole life, I just see “meat substitutes” as something that is used to ease the transition from a meat eater to vegetarianism or veganism (had a lot of friends tell me this). I never fancy meat substitutes because majority of them are highly processed and unhealthy (high sodium contents). Any vegetarians or vegans would not want products that resemble meat, let alone “fool people” due to the fact that we value all living creatures (“ true animal lovers”).

As with many canned foods you can make it better at home with more effort and time. I've had good luck with getting canned jackfruit without any sauce and putting it in a food dehydrator. After it's dried you can reconstitute it with a super savoury stock (try to avoid putting anything sweet in the stock as the fruit is already sweet). Once you replace all the water in the fruit with something savoury and salty it is a lot closer to meat and the dehydration process gives a slightly firmer bite.
Then make a barbecue sauce to your preferences and mix it all up.
This is a favourite with my vegetarian girlfriend but we reserve it for thing like BBQs because of the extra effort involved.

    • @tenyearsinthejoint1
      @tenyearsinthejoint1 4 หลายเดือนก่อน +3

I'm guessing dehydrating it alters the texture so that it feels more meaty? Neat idea

@@tenyearsinthejoint1 definitely does make it a closer texture and replacing the juice with a stock means that you can mitigate that little rush of fruity sweetness when you bite that makes you very aware that it's not meat.

Shredded and fried up like crab cakes its hard tontell the difference .
I've been thinking about getting some spawn and trying to get it growing on logs like the Golden oyster mushrooms and the shiitake mushroom logs we have.

I love king oyster mushrooms. My grandkiddos help the local food bank pass out groceries once a month, and they had them in 2lb packs. A lot of people didn't wan5 them as they didn't know what to do with them. There were so many left that were headed for the dumpster if we didn't take them.
At the end of the day I ended up with 10lbs of pristine gorgeous king oyster mushrooms.
We grilled them and they are incredible.
I ended up freezing a few and dehydrating a bunch. The dehydrated ones have better texture then the frozen ones. I think I have about 1/2 a quart jar left. Our favorite way to use up is in homemade cream of mushroom soup.
I'm not vegetarian or vegan but have friends who are and we often teach each other new recipes for veg.
I bet if I could afford to buy fresh jackfruit would make a good ingredient in chili. With all the spices and beans and tomatoes (I make a everything in the pot type chili not Texas style)I'm sure it would hold up beautiful.

Close enough to be familiar, different enough to be unique. I'm a meat-eater for the most part (in that I am willing to eat meat, I have been cutting back overall) but even still there are times when I genuinely prefer the vegan alternative. Black bean burgers are a good example of that, actually, as I'm generally not a fan of beef to begin with but I do like me a good bean.
I'm glad that these alternatives are becoming more common place. Its good, not just for the people who choose to abstain from meat (or who maybe don't have a choice due to dietary restrictions) but also for those who still eat meat regularly. Nothing wrong with a little change of pace from time to time.

The first time I had jackfruit was a shelf stable ready made meal, the jackfruit had an awful texture almost like chewy pork fat. So not good when its in the form of a vac-seal microwave meal, but if its fresh or properly canned its fine, my best experience with it was a jackfruit burrito from a food truck. I used to be able to get 'shredded mushroom' from my local supermarket, it was great aside from being a bit stringy and getting stuck in my teeth all the time XD

I would recommend most people have at least 3 days of food in stock anyway... the pandemic lockdowns should have taught that lesson. RE water, I appreciate that's a bit more unlikely to be needed, but looking at recent events in Devon with a bacterial issue with the water supply gives an obvious reason why keeping a few bottles in the cupboard isn't exactly an extreme suggestion.

I'm sure this has been suggested before (and if not I'm shocked) but after watching your limited budget challenge videos again and considering how well associated with your brand weird stuff in a can series is, im wondering if it ever crossed your mind to attempt a limited budget challenge of some kind... but limiting you only to weird stuff in a can items. I know for the most part that would leave you with items that, due to thier usual places of origin veing outside of the UK, being of a higher monetary budget. Instead I think it would have to be a limit on how many cans you can, instead of the cost of many cans limiting to saying you can't.
I'd say maybe three meals, over a weekend (or any two days) to include a breakfast, dinner, and lunch. Bonus points for a pudding. In no more than... maybe 8-10 items. To make it harder none can be a whole canned meal, but also you could buy a can that has multiple individual mixed items (for a not weird example, mixed veg) that you could potentially use for a couple of different things if you were able to separate them.
This is just a thought though.

I grew up eating canned jackfruit - but the ripened variety, as a dessert or fruity thing. When I heard that people were eating jackfruit as a meat substitute I gave it a go but found it really unsatisfying. For me it just has the look, like you say, of pulled pork. The texture wasn't giving anything meaty at all. I thought it might be because of my expectation of what jackfruit should be but your reaction to it seems to have been that it was a bit underwhelming as well! Have you tried anything made of seitan? Usually it comes in cans and is sold as mock duck or mock some-other-meat but gives a much more meaty texture.
I was 8 before I tried fresh jackfruit and found that is one of the few fruits that stands up very well to canning, being similar in texture and taste canned as fresh. Maybe you could try that as well?
