  • Let's make our own tofu at home from scratch with only 2 ingredients! (Water doesn't count!) We'll go from soybean, to milk, to coagulating with nigari flakes and finally the tofu. It's super easy to make, so satisfying and also really fun!

    Ok... now that I've seen how that "super easy" production of Tofu at home looks like I'm gonna continue buying that stuff. :D
    If you need that much raw material (and soy beans are hard to get here), time and effort to make just two blocks of Tofu I'm gonna leave this as an upscaled process to the pros.

      @@dereinzigwahreRichi I'm looking into it because I can't get fresh tofu where I live only the vacuum dried kind which rehydrates poorly and doesn't taste soft. I definitely wouldn't consider it with it available around in shops.

      @@metasamsara funny thing that there's lots of vids on YT on how to get your fresh tofu more dried and more chewy... Freeze drying is amongst these options.
      But I understand your problem, some things you have to make yourself as they aren't available readily where you live. I grow Cilantro for that reason, I love the taste but it's not a common ingredient around here and therefore no supermarket has it.

      Thank you for all the love!! ❤️ To make extra firm tofu you just need to press it for a longer time. You can try pressing it overnight, and adding more pressure over time as well. For a firmer, meatier texture you can also freeze the drained tofu until solid then thaw and squeeze the water out before using. Hope this helps! ✨

      @@TheKampungVegan I have a small, screw-type cylinder fruit press and I bet if i leave the tofu in the cloth, I could nearly squeeze it dry! Not sure how it would work leaving it in the muslin, but I'll experiment;) thanks for the recipe! I've actually never made tofu, but because of the recent price increases, it's definitely worth the effort to save the money;)

    Hello ma’am, amazing recipe. How long shall such homemade tofu stay edible if stored properly by using the submerging method as mentioned by you? I’m asking as I’m planning to prepare on weekends and use section wise later. Greetings!

      Hello! Thank you 😊 If you store the tofu in an air tight container submerged in water, it should last up to a week. But the water needs to be changed regularly in order to keep it fresh. To check if the tofu is still okay, it should smell like fresh soy milk. If it smells sour or funky it's not good anymore. Hope this helps!

    Hi new to the channel. My wife and I are trying to be vegan ish lol! We are literally there but keep having set backs. I have tried this recipe 3 times and only got it right once! I looked up 200 grams and it said it is 1 2/3 cups? I am in the US and the measurements always throe me off. The 1st time I prepared it it would not hold shape at all. So I made tofu scramble with it after freezing it. 2nd time I got it right!!! !😊 So thr 3rd time I double the amounts so it wasn't as bad as the first time but my curds were so small when I pressed it it was all water. It did keep it's shape but more like a soft tofu. Thanks for sharing this. I just wished thr amounts were converted for us here in the US. I think 15 ml was 1 Tbsp correct? Better yet can you please convert for me or let me know if this is correct?
    200 grams (1 2/3 cup soybeans)
    2 liters (8cups of water)
    15 ml nigara (1 tablespoon)

      Buy a kitchen scale... Weight and volume measurements don't convert. 200g = 7.05 ounces.

      There’s a channel called Marion’s Test Kitchen that’s done a whole series on “Will it Tofu” where she tries to make tofu out of a whole bunch of different things. From what I remember pumpkin seeds and peanuts yes, black beans no, just off the top of my head.

      Hello, this recipe and method will only work for soybeans and soymilk. If you're interested in non soy tofu, you can look up Burmese Tofu. Hope this helps 😊

    Is there an alternative that can be used in place of nigari? I struggle to find tofu where I live and nigari seems to be even more difficult to find.

      You can use lemon juice, vinegar, GDL or Epsom but I'm not well versed with these coagulants so unfortunately cannot advise they best way to use them!

    Is it necessary to cook the blended soy beans? I've seen soy milk recipes that go immediately from blender to nut milk bag. I'm wondering if you could do that and save the 15 minutes of cooking

      I’m wondering the same, and actually cooking all together makes things more complicated (and messy), because one would need a bigger pan + wait to get the blended mix cold enough (plus I also have the impression it’s easier to strain before cooking). So the order will be: blend beans, soy bag, (separate Okara), bring the milk alone to boil, etc… it worked for me :)

    Just for reference will 100g of soybeans yield 250g of tofu? Also since I do now own a blender can I use my immersion stick to blend? Trying to use what I have on hand. Thanks..

      It should make a 250g block of tofu, but this will depend on how well your soy milk coagulates. As for the immersion blender, it should work just make sure to blend it well until very smooth. Hope this helps!
