    I grew up in Northern California - tacos were always made with corn tortillas warmed in hot oil. I’ve lived in a lot of different places since then and have always been fat-shamed for making tacos this way. Thanks so much for validating my childhood love of tacos fixed properly!!! ❤

    A great tip my dad gave me is to de-fat your chuck roast then throw it through a grinder with the biggest holed plate. Comes out just like the chopped version just way faster. Then melt that cut off fat to fry the meat in. Also make sure the meat is partially frozen, runs a lot smoother.

    My best friend, who has family in Brownsville, introduced me to these tacos about 15 years ago and I had not idea these even existed!! She got me addicted! Sometimes we travel 2 1/2 hours to Brownsville just for these tacos...and see her family, of course. Of course, we've tried making them at home but it never turns out right. Thank you so much for making this video!! I can't believe how simple it is to re-create that amazing flavor and I can't wait to try making them again!!

    I'm from the valley too but live on the east coast and frying the tortilla in oil is the near universal missing step when eating tacos up this way. Good stuff

    Congrats for being so close to a year sober!!! Thats a real challenge that is a lot of work, willpower, and many changes in your life. Thanks for sharing your sobriety, I hope others follow your example. Cookings a wonderful skill to build on while changing a habit. My
    problem is eating the wrong foods. Im loving learning about cooking healthier foods that are still flavorful.       Felicidades for your accomplishment with your weight loss. I have serious back issues, going to have back surgery & so need to lose some weight before surgery. Gracias for sharing. I love food & SOME Mexican food is sadly fattening. However, "Caldos"/soups are so very helpful & we're in the right weather to enjoy. I'll have to omit Tortillas though, lol. However, I so do enjoy Chunky Guacamole with Tortilla Chips 2x a month as my reward WHEN I lose a few lbs that will not set me back. There are quite ALOT of Mexican dishes/"platillos" that will not cause weight gain. Paz be with us all 🙏. "Isa"

    My mom is from Matamoros, my dad was from San Fernando, Tamps. I haven’t gone down to the RGV in ages and I so miss eating the tacos in Mexico. I also miss the barbacoa at ElnCapistran man their barbacoa was the best I ever had.

I have family in Mercedes and McAllen and other boarder towns in the Valley. My love of Texas was the food, the insane pride in the football teams. The Mexican Panedoria and the Mexican American men.     Yo I work in a mexican restaurant and I just learned the reason WHY we prep the corn torts the way we do. It makes so much sense now. I wish that we did that on the line though for the tacos. We do that for the enchiladas and taquitos. I'm gonna try this at work tonight. Love the content by the way

    I live in Houston and have enjoyed tacos like these at Tex-Mex restaurants for many, many years. Also, there is this food truck that makes these tacos and you will be standing in that line for at least 20 minutes before you place your order.

    This is the best tutorial I’ve seen on making authentic tacos. I’m definitely trying the chuck roast next time. I lived in California for many years and now have been in Texas for many years and both states bring something to the table but if I have to choose a side I think it would be Texas though it’s not easy to find authentic Mexican food, Texas likes its Tex Mex. Regardless thank you for sharing and congratulations on your one year, that’s awesome

    I'm enjoying your videos! I'm a giant gringo that lives in Port Isabel but grew up in San Antonio. Still trying to find GREAT TexMex here...
    Anyway, a quick tip from one chef to another; if knife slicing steak, toss that roast in the freezer for 20 minutes or so, it will stiffen up a bit and be easier to slice.
    Can't wait to add chorizo to my next bean batch... thanks for that recipe! 🍺🍺

    One of my, actually my fondest memory of my brother is a 4th of July when we went to a taco stand set up in the park in bisbee arizona and we got greasy tacos, my eyes are tearing up, they were so good we ate so many, great video

    Dude, great job. I like the unapologetic simplicity of this style of tacos. I'm in West Texas and we have a blend of styles and I like all of them, but these are top 3 easy. Selection of meat is key to really great tacos, your choice of chuck roast is perfect.

I knew you were going to mention Ultimo and Gonzalez from Matamoros. Also did you ever go to the Mercadito Treviño Zapata ? Those tacos next to Quintanilla Carniceria were 💣!!!     You brought back memories for me. I forgot all about the coolers filled with fresh tortillas that were warm. Also at this time of year, you'll find those ice chests full of warm tamales, pork, chicken, or beef. I miss south Texas and H.E.B. The best carne asada tacos and carne guisada tacos came from a corner taqueria that was drive thru only and had a couple of wooden picnic tables out front if you wanted to "dine in". Oh and that hot sauce, yum. They had red, green, and orange. They were super thin, non chunky, and came in those little bitty plastic cups with the lids, but a little bit is all you needed. I miss those homemade flour tortillas the most. Fresh, soft, and pillowy.

    I'm a RGV transplant. I have lived in Brownsville for the last 23 years, born and raised in Monterrey, Mexico. I've had different style of tacos from various places in Mexico but this are definitely the best style hands down.

    I spent some time in Brownsville and Matamoros back in the late 90’s. The food was amazing and on every street corner. I remember eating a lot of goat 🎉

    That taco is awesome. I was in the Navy and was stationed in Kingsville NAS 6 months before transferring to Virginia Beach. I used to go to Matamoros almost every weekend. I know where and what you are talking about here. I will be trying to duplicate what you did here soon. I also spent a few years in Albuquerque so have that green chili habit, 5 bushels this year 4 in the freezer. Just made green chili salsa yesterday but will do your street tacos tomorrow!

    Ate some tacos in south Houston from a beat up food truck parked at an abandoned gas station. Best dang tacos I’ve ever had! I cook a lot and make street style tacos sometimes. I cant touch these. Super tasty and great tortillas. I think they make their own tortillas. We got there early, closer to noon a long line started forming.

      before the military I worked construction and use to stop at a food truck in Santa Ana that had the best menudo ever and some slammin tacos. 35 yrs later I still haven't found menudo as good anywhere

    I grew up in South Texas myself. My high school roommate was from Matamoros. We would go to his house for the weekend. I cannot remember the exact name of the place in Matamoros, but I think it was called El Gordolele??? Best tacos ever. They were cooked just like this. So glad I found your channel.

    Great video! I live in the North East part of Texas and we have a healthy population of great Mexican citizens and residents. Several of them have opened authentic Mexican cafes and there are few food trucks running around our town too. Great people making fantastic authentic Mexican cuisine. It's delicious !!!!

    Mother of God, I'm drooling here in Ft. Worth. I have a chuck roast in the fridge and planned on making my usual, Julia Child's Beef Bourguignon or try to do something different. Saw Birria Tacos pop up here on YT...but, you're the winner, going to try yours tomorrow. I even have a meat slicer and beef tallow.     I’ve lived in the Houston area and Dallas area all my life, I’ve had these exact tacos in H town they’re seriously 100/10 I love them!!!!

    I retired to the city of El Campo, TX and we do not have any good Mexican food up here. You have to go to Victoria, Texas and even then, they don't have tacitos like the Valley. I lived there 28 years. I loved those tacos. I would go to El Cien in Los Fresnos. Tripa tacos were great. I'm glad you made this video. I'm making some tacitos. Thanks.

    Thank you! Back in Nor Cal San Jose, there was/is the super huge Berryessa flea market, a huge open air market where you could find anything. My friends and I would always buy those. So delectable. Thanks for sharing.

    Great vid, earned a sub. I wasn't familiar with the caramelized onions move. Looks like you're using a Spanish (yellow) onion vs the white onion I usually associate with Mexican cooking. Is that part of this ranchero thing? Super curious.

    Moved to Austin 8 years ago and I’m originally from Weslaco. No one does it like the RGV, delicious and affordable. We are privileged enough to visit regularly and our first stop is always the local taqueria.

    THANKS for the recipe. I've never thought of chuck for my tacos! I do now thanks brother! I use flank steak and only buy it when it goes on sale in the mark down section of the store save a bundle almost half price and it's aged! I buy all they have and freeze it although it doesn't stay in the freezer long!

    As someone who also lived in the Rio Grande Valley for many years, I have lived all over Texas (Houston, Austin, San Antonio, El Paso, Lubbock) and spent a lot of time in California. No where, and I mean NO WHERE in the U.S. is there better Mexican food than the South Texas Rio Grande Valley mexican food. Up in west texas they use way to many green chilis and Poblanos. Other parts of Texas are just average. Everything in south texas is 1) Way cheaper and 2) SO FRESH and vibrant in taste. I can't believe specialty taco places that sell one taco with barely any fajitas in it for $4-5, ITS INSANE. Or even corn in a cup for $5, its robbery! Can't wait for a reason to go visit the valley again and chow down. I crave one of those south texas snow cones, people down there know what I'm talking about. One of the greatest memories of my life, is when you cross the border and you can smell all the flour tortillas being cooked in the air, it's like pure ecstasy.

    My family brought this recipe back to Northwest Indiana after living in Brownsville for a big part of my childhood. Up here we call these West Brownsville Little League tacos. All our dads would post up behind the fence in right field, drink beer, and make tacos, then we all chowed down after the game!
    Shoutout Ultimo Taco and those frijoles 🤤

    I feel you bro! Grew up on tejano food as a kid. Tejano food doesn’t have anything to do what most people call “texmex” in my opinion people will call standard bad Mexican food as “texmex. There is definitely good Mexican food in LA but it’s also just standard Mexican food from all regions of Mexico. But food in south Texas is food that originates from south Texas.

    Great video. My taqueria near my house uses chicken cubes in the salsa and uses chili oil for the tortillas.

    Chuck Roast is a staple in my diet owing to it's low price point, proper fattiness, and pronounced beef flavor. I live in San Francisco. I don't know of any taco vendors that use chuck for their taco's here. They all seem to use flank steak. When I make taco's at home, chuck is what I use, and it makes all the difference. I have made simple street tacos with finely diced white onions, cilantro, and salsa verde... But, I am definitely going to try grilled onion's instead of raw.
