The fresh pasta would have worked probably if you did not boil it and just baked it as it is. Either way, the mortadella was genius! I wanna try this but with pastrami!

The fresh pasta ‘problem’, was that 1) with the amount of cream & how thin the cream was, it really didn’t needed cooking before hand, 2) if the goal was cooking the pasta, please, one at the time! Or leave the pasta to air dry a bit more, so the consistency is not a fresh as it was, and it could handled the boiling in a bundle & the tongs! The rest of it? Thats the type of caos I love to see in the kitchen, have missed the two of you together! Loved seeing a bit of how to create a new recipe, and that green sauce? Definitely going on rotation, since i’m lasagna kind girl year round! ✨ Thanks guys for the awesome video!❤
I totally agree, if it was the hard sheets from the package then you'd boil it although I make mine with raw pasta sheets, not preboiled ones and the pasta has a more of a bite to it. Just a personal preference!
Why cook the fresh pasta at all? the time in the oven would probably be enough to cook it through. I don't even pre-cook my dry pasta and have never had a problem.
Did I make this with irrational confidence before part 2 came out: yes Did I over-whip the cream into basically whipped cream/butter: yes Did I know immediately I f'd up: yes BUT was I in denial and proceeded frantically with assembly: yes Did it still come out SO GOOD: HECK YES

The pasta fell apart because it was not worked enough. You could tell even from the ingredients shot, it was way too rough. YOu have to work it, rest it, then run it through the machine or by hand several times folding and rerolling.

Fun project, love their chemistry! But I really don't get the potatoes. I'm thinking spinach and leeks. And prosciutto instead of mortadella. Or you could make it with just potatoes and no noodles.

absolutely, you cannot put fresh sheet pasta in a rolling boil it will fall apart. For a Lasagna it would not need pre-cooking.
