THIS is the kind of minestrone soup I’ve been making my family for the past 11 years for New Years Eve. I haven’t seen any one else make a good traditional minestrone with these veggies other than my grandparents. I’m Italian, and southern, so I was taught to use chard or collards instead of the cabbage. I make it as a New Years tradition, so the beans and green collards are for the southern tradition. I make a HUGE pot and deliver it to family as well. To me, it’s the best soup when you’re sick. It’s also the best when it’s cold outside. And the best comfort soup when you just want a healthy pick me up in the middle of the week. This soup got me and my kids through a rather difficult deployment over the holidays 11 years ago when I didn’t have the energy to make a huge New Years meal. So now it’s a NYE tradition. I will have to add the meatballs this year and use fresh tomatoes instead of canned. One thing that makes me giggle is the reaction I get when my friends and my husband’s family see me cook the pasta separately.
He is terrific. I love the way he explains everything step-by-step. His accent is so sweet and charming!!! I can't wait to prepare this recipe. Love this grandpa!!!!

My grandmother said the same thing about the tomatoes. You have to take the skin off because you could get it caught in your throat and choke. She was not Italian but my grandfater immigrated from Italy through Ellis Island with his parents when he was a very young child. His mother taught my granmother how to cook. I sure do miss the meatballs she used to make. She always put the rind of the romano cheese in the soup. Hees was delicious. She also put italian sausage or roast beef in hers. And being in louisiana we use red beans in our minestrone as well. Now I am going to jave to make some even though it is August and very hot outside. Oh well turn the air down and get ready for a higher electric bill.
I cook the minestrone same as you, but I never included the bacon....I will next time though. Oh man, I use more garlic than that, and certainly leave them in the pot, I love garlic:) ....I put garlic in almost every recipe. Thank you for sharing this wonderful video.
