Been trying to make Wedding Soup the right way for years… this recipe is GREAT! The ingredients add the perfect amount of flavor, especially the broth. Soup was Fantastic! We were cooking other items for dinner, and so I didn’t want to spend a lot of time preparing, so I got a product from Surfixinc (Melbourne, FL), to help make the meatballs faster. Turns out I saved at least an hour or more in the kitchen not having to roll the meatballs by hand.
Good recipe, but I think the BEST ONE is made by cooking a Whole Chicken to make a nice Broth, then taking the chicken meat off the bone and putting into the Soup with the Meatballs & Escarole .. Every region is so very different. I am Sicilian/American from New Jersey. I now live in Florence, Italy, and they never heard of Italian Wedding Soup (they claim anyway) because it is a Southern Italian dish. And they also use besciamella and NOT ricotta in lasagne. Can you imagine!

I used Osara's recipe. It's called the mini-meatball maker and I purchased it from a company called Surfix, Inc out of Melbourne, Fl.

If you cook the meatballs in a pan and brown them first it adds an extra layer of flavor makes it so much better.
You don't do that with soup

Yellow tail wine I believe. Man has good taste.
Where is the written recipe? I can only find the one without eggs.
Also try instead of putting meatballs into the soup, put the in the oven for 10 minutes. Gives you a different kick.

I'm italian nearly 50 yo. Never seen this recipe in Italy. And they call it "italian wedding soup".
