So, I made 120 cupcakes for a funeral this weekend using this hack. I doubled the recipe to make two batches at a time. THEY WERE AWESOME!!!! Thank you, thank you, thank you so so much!!! I made the cream cheese frosting too. Just excellent. I was so pleased with how they turned out. The orange zest and fresh spices were the key! Many thanks!

I enjoy cake mix hacks. It's less time consuming when you're in a pinch. However, I am a 99% scratch baker and cook. Can't help it, my dad was a chef. I do have a question regarding the carrot cake hack though. Did you utilize the dehydrated carrots in the box then added fresh grated carrots? Keep on filming your videos. Your videos are great.

There's only one thing I would add. And thats 2 small boxes of raisins. Nuts on top only wouldn't be enough so in batter as well. What is orange zest, is that the skin/peel of the 🍊. I'm freaking out about using the juice from oranges. That's music.
