Your cakes cracked at the top because they cooked to fast. I noticed you had the rack one notch too high. The higher the rack, the hotter it is inside the oven. Potatoes are yummy on a higher rack because they get crispy, but not a cake. Lower your rack one spot, and I’ll bet those cracks go away. To help keep the frosting from sticking and pulling the cake, dip the knife in ice water, as often as necessary. You won’t get all those crumbs mixed in with the frosting. You’ll find the frosting will spread much more easily! ❤️ I’m going to try your hack tomorrow! It looks delicious! Thanks!
To me it also looks like you may have baked the cakes on convection bake and I always fine that cake bakes better without convection at least imho. And that will have have contributed to the too fast baking; rising with a hump in the middle and cracking. If you’re going to use convection bake you should probably drop the temperature from 350 to 325.
that being said homemade butterfrosting is easy. Just whip icing sugar and butter together, you can add a tablespoon of milk and a teaspoon on vanilla if you want.
Holy moly! Two weeks ago I made a from scratch vanilla cake for my son’s birthday. Lots of ingredients, 15-20 steps and it was average. My kitchen was a complete wreck. I’m usually a clean as I go baker, but not this time. Could be that my four-year old granddaughter was my helper. 😊 Today I made this cake (cupcakes) for my daughter’s birthday and it is EXCELLENT! Beating the eggs prior to adding them to the mix also helps to make the mix fluffier. Like using milk, you can also use buttermilk, sour cream, or cream cheese to make a rich cake. Also there is an oven temperature difference between using a metal/dark pan vs a Pyrex.
For people who like the butter and flouring of pans, but don't love the flour residue, remember that for light cakes you can use butter and then dust with sugar and for dark cakes you can use butter and then dust with cocoa.
Hey Kelly, hope everyone is well. Before you put the cake in the oven gently drop it on the counter a couple of times, it helps get any air bubbles out and may stop the top from splitting. Love the bloopers.

I know the pudding mix hack and where I learned it... I am 45 years Old, when I was 20 i took a Wilton's cake decorating class at michel's arts and crafts. The first class was how to make the cake. The teacher was Wilton certified bakery owner and she told us to use the moist cakes mix with the butter and pudding mix. That was 25 years ago and I'm still doing it today. I have the lost from that class that told what flavor pudding to pout with which cakes. Like apricot pudding with the classic white and vanilla pudding with the butter. Great hack girlfriend! 💖💖💖 it!

Kelly a favorite hack of mine with chocolate cakes is to dust the pan with cocoa after you’ve greased or sprayed your pan- extra added chocolate flavor 👍👍
I made this recently, only into cupcakes. I used a box of Hershey's instant chocolate pudding and coffee instead of water. Coffee brings out the flavor of chocolate. I also added Hershey's semi sweet chocolate morsels. All I can say is OMG. They didn't last long.
oiljackpot , if you do that be sure to refrigerate the cake. Do not let it sit at room temperature or outside on a warm day like at a picnic etc... Cream cheese will spoil being a dairy product that requires refrigeration. Great cake, awesome frosting but people will get sick if not stored properly. Enjoy, it’s a great addition to make❣️👍

When the recipe calls for butter and flour, I also spray my pans but I put some of the dry cake and shake it around and dump the extra in the mixing bowl. For chocolate cake sometimes I use cocoa to cover the bottom of the pan. Love you videos 💕
You must try the WHIPPED Betty Crocker frosting. Take it out of the can and whip it, it spreads easier and goes further. That cake hack looks delicious.
Add a little strong coffee to cake mix and frosting. Doesnt add a lot of coffee flavor, just deepens the taste of the chocolate, also warm up the canned frosting and pour over cake. Smooths out beautifully.
This recipe is my kinda recipe. Here is another tip for you if you dont already have it. I found this one in southern living. You take a german chocolate cake mix add 16 ounces of sour cream 1/4 cup melted butter 2 eggs and tsp vanilla. Batter will be thick and you will have to cook it a little longer than a regular cake mix recipe. It is oh so good and I make a homemade chocolate cream chesse icing with lots of butter in it. Duncan Hines is my cake mix of choice it has more in it than the Betty one does.
Kelly I taught cake decorating for many years. I suggest that you purchase an offset spatula cost under 2 dollars. You will love it and makes putting on frosting and getting your cake smooth.
How I’ve been making homemade chocolate cake since I was 16, along with adding 2oz of instant espresso to the batter. Also a quick Ganache with 2 more oz of espresso as a decadent “frosting” will bring this chocolate cake, over the top. Make sure to have some ice cold milk ready, on the side. 🥰

Bakery chef shared tip that a cake cracks because the heat doesn’t evenly dissipate when baking so batter bakes at a different rate on the perimeter than the center. One solution is a wrap you can make or buy that is secured around the outside perimeter of any shaped pan. It helps the entire cake to bake at a more consistent temperature which results is a perfectly flat top‼️. Loved that tip & it really works👍

I love it cold too with COLD MILK. I think it's weird when people eat cake with coffee. For me and our family, hot coffee with a cold cake is a contradiction, UNLESS you can't live without coffee. On a 100 degree day, my x-husband would drink hot coffee all day. WHY? Because that's how they all had it at home.
I have to share with you my favorite box cake hack from the days I used to use box mix! The hack I am offering you now is to reserve about 3 heaping Tbsp. of the dry cake mix and then butter your pan(s), and use the reserved cake mix to "flour" your pans. This works with any flavor cake and you have no flour to try brushing off! Great for "naked cakes". This can also work for scratch bakers just by mixing your dry ingredients and reserving the same 3 TBSP. of your dry ingredients. Then mixing the wet and dry ingredients. I also was told to use the milk and butter. But, that was so it would taste like a homemade cake made from scratch! Happy Baking!
I've been doing this for years. I also add raspberry extract in the frosting. Triple chocolate fudge is my favorite. I also make carrot cake with spice cake. I add carrots, cinnamon, coconut, pineapple, raisins and walnuts. Make my own CC Frosting they think it's from scratch.

My mother made her pineapple Upside-down cake by adding pudding to her cake mix, an extra egg, a stick of butter, and the pineapple juice instead of the milk. I've been making it that way for 55 years. It never fails to please! BTW, we all grew up with unrefrigerated cake. Once the dairy ingredients are turned into a cake, it's not necessary to keep them cold. Room temperature cakes have more flavor! 😉

Karen Andcatz making homemade icing is literally easier than making the box cake is, or about the same as the cake, but is so much better tasting than the can frosting is. I make mine in my kitchen aid mixer but you could also use your hand held mixer and will turn out just as good but may take just an extra couple minutes. Do a google search for “buttercream icing” and trust me, you will never use store bought icing again, especially once you find out how easy it is and how delicious it is! Good luck and enjoy!

I just had to tell you that I made this cake tonight for my family and it was a big hit. For the icing and I scraped it out of the container and put it in a bowl with a half brick of cream cheese and whipped it and oh my God it was the best thing. The cake was super rich and tasty. I followed your instructions to the tea except I added a half a cup of sugar and when I say it was perfect I do mean perfect. Thank you so much. I will make it like this from now on.

Here's something you might want to try sometime. I tried it, loved it, and do it every time I use a can of chocolate frosting. Here's what you do. You scoop out all the frosting from the can into a glass bowl. Then add to the frosting either 1 T of shortening or 1 T of butter (either one works fine (that's T for Tablespoon, not t for teaspoon). Then, using a hand mixer -- mix it up for about 45 seconds only -- on medium speed. You'll be amazed what happens to the frosting. Instead of being thick, pasty, and gloppy like it was in your video -- it becomes very smooth and fluffy, much easier to spread and quite tasty too. I'll bet if you try it, you'll be hooked on it like I am. Thanks for your video.

@@jennjennjohnson I add creme chez to alot of my frostings. If not room temp I stick it in microwave for 10-15 seconds them just whip with just a little splash of milk to make smooth then add frosting I whip all together really well. Always love the results & so does the family.

I have been practicing on this same box mix!! I am going to make my wedding cake with it. I like to replace the water with strong brewed coffee and heavy cream, add sour cream + pudding + 1 extra egg yolk. I think I found that all online somewhere. I'll definitely have to try replacing the oil with the butter as well!! I have been making the cake with a caramel filling but a chocolate filling sounds really good too.😋
Kelly, another good way to easily ice your chocolate cake is to pour a bag of chocolate chips over it while it's still warm. When chips are melted just spread with a spatula!

I just started making microwave ganache and it's SO Quick/EZ and a game changer. Great to top on a cake or cupcakes esp pretty dripped over a bundt ! The choc is the only flavor so use a decent quality. Just mix = parts heavy cream and dark choc (I use dark chips for ease--Toll House Dark for a lil sweeter at 53% cacao or Ghirardelli for a lil darker at 67%). So if I do a 8 oz heavy cream, I'll do 8 oz (or 1-1/3 c chips bc 6 oz chips = 1 cup). Scald your cream in the microwave. I do 30 sec intervals til I see it just starting to bubble. Dump in your chips and shake the bowl so they're flat and sit 2 min. They'll melt and then whisk and you can add a little butter or corn syrup for shine but it's optional. Drizzle it on your cake or refridge it for a spreadable consistency. I often make just a couple Tbsp worth of each for a quick pretzel or fruit dip. You can play w the proportions after u get the hang of it but the beauty is u can make 2 Tbsp or a bowlful! It was a hit even w the men in the fam since it's not overly sweet like frosting. Give it a try! Easy way to take this cake hack to the next level and they'll think you worked way harder than you did.
I just want to share this with you. My mother was a nurse. She got up really early one Friday morning baked a chocolate cake and cleaned our house as we were having dinner guests that night. Before leaving for the hospital she left a note for my brother and me because we would get home from school before she got home from work by about half an hour. The note said, " Donny, you may have one piece of cake." When she got home there was one small slice of cake on the cake plate. Mother was so upset and asked Donny why he chose to disobey her. He told her that he didn't and that she didn't say what size piece of cake he could have. I was amazed that she didn't punish him. He was fourth grade and I was third. Double chocolate was his favorite cake and he was afraid the adults would eat all the cake and he wouldn't get any. He was already upset that he didn't get to lick the spoon. He also ate our Hershey bars Christmas Day. We each received four 1 lb. Bar in our stockings. He ate one of his before we left to go to our grandparents. When we got back home that night there weren't any bars in my stocking and I had not eaten any nor removed them from my stocking. After questioning from my parents we discover that Donny took his remaining 3 and my 4 in the car with us and ate all of them. He did get in trouble for that, but only because he "stole" mine. He loved chocolate till he died. I took him triple Fudge cake two weeks before he died. I wish I could take him chocolate again.

Another little hack is adding instant coffee to a chocolate brownie or cake mix. Add 1 to 2 teaspoons of a high quality instant coffee, or if it’s a store or generic brand use 1 tablespoon. Your cake won’t taste like coffee at these amounts, it will just enhance the chocolate flavor.

This cake sounds delicious if you would want to make a “Mississippi Mud Cake”; our recipe adds coconut and chopped nuts to the batter. It is baked in a greased sheet pan. Then a 7 oz. jar of marshmallow fluff is spread on the warm cake (let the cake cool just a little first). Our recipe gives a cooked frosting. Maybe heat the canned frosting on the stovetop. The plastic frosting containers will spark in the microwave (even with any little bit of the container seal left on the rim), so don’t microwave them. The warm frosting is poured over the marshmallow. Cool the cake and serve. It’s an easy way to vary your types of cakes. Your cake sounds like it would work great for it. H. Lloyd

02:00 - Substitute milk for water, 2 sticks melted butter for veg oil and 4 large eggs instead of 3.
and don't forget the powdered pudding mix.
I do a very similar cake w/yellow cake: milk, 1 stick butter, 3 eggs, pudding mix. If you can get the White Chocolate do that.
French Vanilla works well, too. Has to be Duncan Heinz cake mix, too.
And calories have just quadrupled.

For people who like the butter and flouring of pans, but don't love the flour residue, remember that for light cakes you can use butter and then dust with sugar and for dark cakes you can use butter and then dust with cocoa.

Hey Kelly, hope everyone is well. Before you put the cake in the oven gently drop it on the counter a couple of times, it helps get any air bubbles out and may stop the top from splitting. Love the bloopers.

I know the pudding mix hack and where I learned it... I am 45 years Old, when I was 20 i took a Wilton's cake decorating class at michel's arts and crafts. The first class was how to make the cake. The teacher was Wilton certified bakery owner and she told us to use the moist cakes mix with the butter and pudding mix. That was 25 years ago and I'm still doing it today. I have the lost from that class that told what flavor pudding to pout with which cakes. Like apricot pudding with the classic white and vanilla pudding with the butter. Great hack girlfriend! 💖💖💖 it!

I made this recently, only into cupcakes. I used a box of Hershey's instant chocolate pudding and coffee instead of water. Coffee brings out the flavor of chocolate. I also added Hershey's semi sweet chocolate morsels. All I can say is OMG. They didn't last long.

Suggestion: Add one package of cream cheese to each of those frosting cans. Beat together well and frost cake.
oiljackpot , if you do that be sure to refrigerate the cake. Do not let it sit at room temperature or outside on a warm day like at a picnic etc... Cream cheese will spoil being a dairy product that requires refrigeration. Great cake, awesome frosting but people will get sick if not stored properly. Enjoy, it’s a great addition to make❣️👍

When the recipe calls for butter and flour, I also spray my pans but I put some of the dry cake and shake it around and dump the extra in the mixing bowl. For chocolate cake sometimes I use cocoa to cover the bottom of the pan. Love you videos 💕

Add a little strong coffee to cake mix and frosting. Doesnt add a lot of coffee flavor, just deepens the taste of the chocolate, also warm up the canned frosting and pour over cake. Smooths out beautifully.

This recipe is my kinda recipe. Here is another tip for you if you dont already have it. I found this one in southern living. You take a german chocolate cake mix add 16 ounces of sour cream 1/4 cup melted butter 2 eggs and tsp vanilla. Batter will be thick and you will have to cook it a little longer than a regular cake mix recipe. It is oh so good and I make a homemade chocolate cream chesse icing with lots of butter in it. Duncan Hines is my cake mix of choice it has more in it than the Betty one does.
Kelly I taught cake decorating for many years. I suggest that you purchase an offset spatula cost under 2 dollars. You will love it and makes putting on frosting and getting your cake smooth.

How I’ve been making homemade chocolate cake since I was 16, along with adding 2oz of instant espresso to the batter. Also a quick Ganache with 2 more oz of espresso as a decadent “frosting” will bring this chocolate cake, over the top. Make sure to have some ice cold milk ready, on the side. 🥰

Bakery chef shared tip that a cake cracks because the heat doesn’t evenly dissipate when baking so batter bakes at a different rate on the perimeter than the center. One solution is a wrap you can make or buy that is secured around the outside perimeter of any shaped pan. It helps the entire cake to bake at a more consistent temperature which results is a perfectly flat top‼️. Loved that tip & it really works👍

Years ago, I heard about adding 1/4 of a cup of mayonnaise to any cake recipe. It can be added whether it’s a box cake or a homemade one. It can also be added to any brownie mix. I have done this ever since and it makes the most moist cake ever!!!

I love it cold too with COLD MILK. I think it's weird when people eat cake with coffee. For me and our family, hot coffee with a cold cake is a contradiction, UNLESS you can't live without coffee. On a 100 degree day, my x-husband would drink hot coffee all day. WHY? Because that's how they all had it at home.

I have to share with you my favorite box cake hack from the days I used to use box mix! The hack I am offering you now is to reserve about 3 heaping Tbsp. of the dry cake mix and then butter your pan(s), and use the reserved cake mix to "flour" your pans. This works with any flavor cake and you have no flour to try brushing off! Great for "naked cakes". This can also work for scratch bakers just by mixing your dry ingredients and reserving the same 3 TBSP. of your dry ingredients. Then mixing the wet and dry ingredients. I also was told to use the milk and butter. But, that was so it would taste like a homemade cake made from scratch! Happy Baking!
I've been doing this for years. I also add raspberry extract in the frosting. Triple chocolate fudge is my favorite. I also make carrot cake with spice cake. I add carrots, cinnamon, coconut, pineapple, raisins and walnuts. Make my own CC Frosting they think it's from scratch.

My mother made her pineapple Upside-down cake by adding pudding to her cake mix, an extra egg, a stick of butter, and the pineapple juice instead of the milk. I've been making it that way for 55 years. It never fails to please!
BTW, we all grew up with unrefrigerated cake. Once the dairy ingredients are turned into a cake, it's not necessary to keep them cold. Room temperature cakes have more flavor! 😉

Karen Andcatz making homemade icing is literally easier than making the box cake is, or about the same as the cake, but is so much better tasting than the can frosting is. I make mine in my kitchen aid mixer but you could also use your hand held mixer and will turn out just as good but may take just an extra couple minutes.
Do a google search for “buttercream icing” and trust me, you will never use store bought icing again, especially once you find out how easy it is and how delicious it is!

I just had to tell you that I made this cake tonight for my family and it was a big hit. For the icing and I scraped it out of the container and put it in a bowl with a half brick of cream cheese and whipped it and oh my God it was the best thing. The cake was super rich and tasty. I followed your instructions to the tea except I added a half a cup of sugar and when I say it was perfect I do mean perfect. Thank you so much. I will make it like this from now on.

Here's something you might want to try sometime. I tried it, loved it, and do it every time I use a can of chocolate frosting. Here's what you do. You scoop out all the frosting from the can into a glass bowl. Then add to the frosting either 1 T of shortening or 1 T of butter (either one works fine (that's T for Tablespoon, not t for teaspoon). Then, using a hand mixer -- mix it up for about 45 seconds only -- on medium speed. You'll be amazed what happens to the frosting. Instead of being thick, pasty, and gloppy like it was in your video -- it becomes very smooth and fluffy, much easier to spread and quite tasty too. I'll bet if you try it, you'll be hooked on it like I am. Thanks for your video.

@@jennjennjohnson I add creme chez to alot of my frostings. If not room temp I stick it in microwave for 10-15 seconds them just whip with just a little splash of milk to make smooth then add frosting I whip all together really well. Always love the results & so does the family.

I have been practicing on this same box mix!! I am going to make my wedding cake with it. I like to replace the water with strong brewed coffee and heavy cream, add sour cream + pudding + 1 extra egg yolk. I think I found that all online somewhere. I'll definitely have to try replacing the oil with the butter as well!! I have been making the cake with a caramel filling but a chocolate filling sounds really good too.😋

Kelly, another good way to easily ice your chocolate cake is to pour a bag of chocolate chips over it while it's still warm. When chips are melted just spread with a spatula!

That cake looks so good.
I just started making microwave ganache and it's SO Quick/EZ and a game changer. Great to top on a cake or cupcakes esp pretty dripped over a bundt ! The choc is the only flavor so use a decent quality. Just mix = parts heavy cream and dark choc (I use dark chips for ease--Toll House Dark for a lil sweeter at 53% cacao or Ghirardelli for a lil darker at 67%). So if I do a 8 oz heavy cream, I'll do 8 oz (or 1-1/3 c chips bc 6 oz chips = 1 cup). Scald your cream in the microwave. I do 30 sec intervals til I see it just starting to bubble. Dump in your chips and shake the bowl so they're flat and sit 2 min. They'll melt and then whisk and you can add a little butter or corn syrup for shine but it's optional. Drizzle it on your cake or refridge it for a spreadable consistency. I often make just a couple Tbsp worth of each for a quick pretzel or fruit dip. You can play w the proportions after u get the hang of it but the beauty is u can make 2 Tbsp or a bowlful! It was a hit even w the men in the fam since it's not overly sweet like frosting. Give it a try! Easy way to take this cake hack to the next level and they'll think you worked way harder than you did.
I just want to share this with you. My mother was a nurse. She got up really early one Friday morning baked a chocolate cake and cleaned our house as we were having dinner guests that night. Before leaving for the hospital she left a note for my brother and me because we would get home from school before she got home from work by about half an hour. The note said, " Donny, you may have one piece of cake." When she got home there was one small slice of cake on the cake plate. Mother was so upset and asked Donny why he chose to disobey her. He told her that he didn't and that she didn't say what size piece of cake he could have. I was amazed that she didn't punish him. He was fourth grade and I was third. Double chocolate was his favorite cake and he was afraid the adults would eat all the cake and he wouldn't get any. He was already upset that he didn't get to lick the spoon. He also ate our Hershey bars Christmas Day. We each received four 1 lb. Bar in our stockings. He ate one of his before we left to go to our grandparents. When we got back home that night there weren't any bars in my stocking and I had not eaten any nor removed them from my stocking. After questioning from my parents we discover that Donny took his remaining 3 and my 4 in the car with us and ate all of them. He did get in trouble for that, but only because he "stole" mine. He loved chocolate till he died. I took him triple Fudge cake two weeks before he died. I wish I could take him chocolate again.

Another little hack is adding instant coffee to a chocolate brownie or cake mix. Add 1 to 2 teaspoons of a high quality instant coffee, or if it’s a store or generic brand use 1 tablespoon. Your cake won’t taste like coffee at these amounts, it will just enhance the chocolate flavor.

This cake sounds delicious if you would want to make a “Mississippi Mud Cake”; our recipe adds coconut and chopped nuts to the batter. It is baked in a greased sheet pan. Then a 7 oz. jar of marshmallow fluff is spread on the warm cake (let the cake cool just a little first). Our recipe gives a cooked frosting. Maybe heat the canned frosting on the stovetop. The plastic frosting containers will spark in the microwave (even with any little bit of the container seal left on the rim), so don’t microwave them. The warm frosting is poured over the marshmallow.
Cool the cake and serve. It’s an easy way to vary your types of cakes. Your cake sounds like it would work great for it.

Nonstick spray is vegetable oil, canola oil, etc. with silicone… use butter

Hi Kelly : new here and does look professional - like you just took it out of a Pepperidge farm refrig/freezer cake box ! In the almost , maybe year I've been doing dump cakes of every concoction . Using pie fillings along with cake mixes !! Thanks & will try one of your ideas 🤗

I can’t wait to try this. The homemade look is perfect. I always take the canned frosting and put it in a bowl and beat it with my hand mixer. It actually lightens the color and almost doubles the amount that I originally started out with. 💕 Have you tried this?
Looks just like one of my Gramma Grace's cakes, and that's a very good thing. Only difference is she put multi-color sprinkles on everything she baked. Cake looks amazing, and thanks for the memory!!!!! 👏🇺🇸💜
