My grandmother made the best angel food cakes. I remember her using a flat wire device, strung rather like a tennis racket to whip the whites in a big aluminum bowl. She did not use super fine sugar. She gave hand written notes to my mother about how to make this cake which I have. My mother always used her Sunbeam mixer for this job and while her cakes are very good, they never were quite as good as my grandmothers. We ate these cakes plain. After trying to make them myself, using my mixer and not being totally pleased, I did one time whip the whites with a wire whisk by hand. That cake was the best I'd ever made. There seems to be something VERY important about the whites and sugar combining VERY VERY slowly. Mixers just speed this process up to the detriment of the final result. At any rate the texture of this cake when made well by hand is not remotely like those from a mix or a bakery! My grandmother always made a gold cake using the yolks left from the angel food cake. The two favorites of her two children.

Try adding King Arthur's Baking extract: Fiori di Silicia to the strawberries. The extract is a flavor of orange & vanilla. It adds a flavor profile that is amazing without detecting the actual flavors of the Fiori di S. (Chef's kiss).

This is great timing from an experimental perspective for me, as I just made an angel food cake last night with left over egg whites from making ice cream. I've only made 3 angel food cakes so far, and tend to go crazy experimenting with new recipes, so I'm happy to have seen results with a slightly altered method! The ingredient amounts are the same, but our techniques varied. I don't create super fine sugar and only sift once. I beat to a stiffer peak. I used the whisk attachment to incorporate the flour in a couple pulses per addition. Same pan, yet my cake rose above the second rivet, and no sinking in the center. My oven temp was 325, so I wonder if the lower temp, extra time helped the rise? See, I can go on and on... Thanks for the video and Happy New Year!

TBH, an Angel Food Cake is my least favourite cake. It just never "hits the spot" as they say. However, I appreciate how delicate it is and was nice to see how it is made.
Another way to serve your Angel food cake is to cut the cake into three layers after you have removed it from the pan. When cool, cover the bottom layer with a generous layer of coffee ice cream. Then cover that with the second cake layer. On top of the second layer cover with a layer of chocolate ice cream. Then put the last cake layer on top. Then cover the entire cake with a frosting you'll make from fresh whipped cream made with heavy cream, a little sugar and vanilla with "Heath Bar" bits mixed in after the whipped cream is fully whipped. (Health Bars are toffee bits with chocolate icing). Or instead of Health Bar bits, use just toffee bits. This dessert is a HUGE CROWD PLEASER!
My mother loved angelfood cake and made a good one, which we ate with macerated fresh strawberries or raspberries all summer long. For me, it's a rather boring cake and somewhat fussy to make. I'd rather have my berries on a richer shortcake.
