    Every Filipino in this comment section should understand that every family, business, person has their own version of literally ANY Filipino food. Erwan made everything from scratch from his peanut butter to his thickeners, that’s why it’s a long process. If you have your shortcuts that cut down on time and is more convenient, then that’s great for you. Kare-kare is a well known Filipino dish that can easily be googled if you feel intimidated by this version. Filipino Food Purists need to calm down.

      @@bob.delrio Kuya ok ka lang? Bawat cuisine at putahe sa buong mundo may kanya kanya silang version ng mga putahe na yun, kaya wag mo sabihin na nakakadismaya. Sa culinary world, kaya gumagawa sila ng kanya kanyang version nila dahil gusto nila maging original, pero di ibig sabihin nun na kinakalimutan na ang original. Kaya nga may mga tourist na nageexplore sa pinas para ma identify ano ang authentic. And again like I said, di lang sa pinas ganyan, lahat ng cuisines hindi nag sstick sa original version, kase the culinary world aims creativity.....di close minded tulad mo. And correction lang, but Adobo is already considered as the National dish of the philippines, and yet adobo still has different versions, ang pag pili ng national dish ay hindi nag dedepende kung madami siyang version. Search about acculturation kuya, pag isang bagay nalipat sa ibang lugar, nakakabuo ng panibagong version, parang mga dishes lang sa pinas, and that's not bad because we are creating something new and more just from one core. Lastly, every food goes through evolution, why? So that it becomes better, as long as people loves to eat the dish, why not, kulang lang is hindi na eeducate ang ibang pinoy. Humans also experience evolution, to develop ourselves, but still remembering where we originated from, same concept but depende na sa tao kung nakakagets sila. If di mo parin gets, bahala ka diyan, ang akin lang lalo na ay nag-aaral ako ng culinary, wag na wag mong tatawagin na nakaka dismaya ang Filipino Cuisine, study before you talk!

    For anyone with a peanut allergy, my mom and I tried this out with sunflower butter. Of course it's not going to be exactly the same, but it's really delicious and an amazing birthday treat after not having been able to safely eat this dish in 10+ years

      my father cant eat peanut or any kind of seeds because of his arthritis so my mom used kalabasa as a substitute for a peanut sauce and it is really good

    I am adding shrimp paste / fish sauce when i saute the onion and garlic. The flavour enhances and makes the sauce really good.

    I’ve cooked this several times and it’s always a hit every time I serve it. I don’t make my own peanut butter though, I use a creamy Skippy or Peter Pan peanut butter and both taste great with this recipe. 👍🏻

    The tomatoes taste dissolve into the peanut butter soup. Since the peanut butter over powered everything, you don't have to worry about changing the taste.
    I don't know whose recipe is he trying to imitate or is he not imitating at all but in the world of culinary, inventing is what makes a dish different. That's why we have tons of different flavor of the same dish (ex. Ice cream, ramen, pasta, and etc.).

    I agree, Erwan. Kare Kare is a tad too rich for me so I like to have it with anything pickled as a side dish whether it be radish, green mango, cucumber, or atsara. Just to cut the richness and for tanggal umay. Makes me eat a lot too. 😅
    And yes. I usually don't need bagoong. Most times I don't want it at all anymore. 😊

    Love that you made everthing from scratch. Most Filipino cook vloggers do a lot of shortcuts and uses pre-made ingredients which I think lessens the depth of the flavor and takez away the art of cooking.

    why do people can't understand the fact that it's Erwan's Version of kare-kare. Malamang sa malamang it's different from your kare-kare recipe kasi nga it is HIS OWN VERSION. my ghad, the comprehension of the narration. Next time, try to watch and also UNDERSTAND whatever Erwan is saying. Im stressedt, I need some kare-kare lol.

    Totally understand on which kind of Beef to use for making this recipe. If I am unable to find Oxtail, cause it is expensive. I just use Beef Shank & Beef stewing meat..

    I've never been able to successfully make kare-kare. My attempts always seemed to be lacking in flavour somehow. I'll try the flavoured annatto oil and adding the herbs or lemon at the end to see if it makes a difference. Thanks, Erwan!

    Love this recipe! Kare kare has always been a dish that I have a complicated relationship with. I don't cook, of course, but it's difficult to get this dish "right". And because of that, we don't eat it much at home. The peanut butter is *very* crucial in my opinion and I feel you could have added more detail in that step. I don't like sweet anything so properly salting the peanut butter can make or break the dish.
    Loved the oil preparation and the usage of the fat from making the broth! I'm sending this to my wife immediately and asking her to make it. Salamat po!

    In laguna, kare kare is like merienda type of dish... You can actually see the grinded rice... The soup is a little thinner... And the vegetable that we usually use are thinly sliced puso ng saging...

    Onion and tomato in a kare-kare is foreign to me and idk if that's because it's not traditional and my household always cooks it the traditional way (aka the easiest way to them due to how common it is) or what but I am curious to see how those would work in a kare-kare
    Kinda wish there were more recipes of the food that tries to bring their own twist to it a bit or whatnot. Especially from the west. I've seen folks do nearly every type of Asian cuisine their own way besides Filipino (especially kare-kare) and I wish to see more of that, so finding this recipe is a breath of fresh air lol

    Beef cheeks are also good for Kare-kare in addiiton to oxtail, tripe(cheapest) and beef shanks. Not fond of pork pata for kare-kare....ps the tomatoes is a surprise ingredient.
