  • Here's a simple and delicious recipe for salna, a popular South Indian curry that pairs well with parotta, biryani, or rice.
    Ingredients
    For the masala paste:
    - 2 tablespoons oil
    - 1 large onion, sliced
    - 2 tomatoes, chopped
    - 2 cloves garlic
    - 1-inch piece ginger
    - 2 tablespoons grated coconut
    - 2 tablespoons chopped cilantro
    - 1 tablespoon poppy seeds
    - 1 tablespoon fennel seeds
    - 1 tablespoon coriander seeds
    - 1 teaspoon cumin seeds
    - 4-5 dried red chilies
    For the curry:
    - 2 tablespoons oil
    - 1 large onion, finely chopped
    - 1 teaspoon mustard seeds
    - 1 teaspoon cumin seeds
    - 1 cinnamon stick
    - 2 cloves
    - 2 cardamom pods
    - 1 bay leaf
    - 1/2 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon coriander powder
    - 1 teaspoon garam masala
    - Salt to taste
    - 2 cups water
    - Fresh cilantro for garnish
    Instructions
    1. Prepare the masala paste:
    - Heat 2 tablespoons of oil in a pan over medium heat. Add the sliced onion, chopped tomatoes, garlic, and ginger. Sauté until the onions are golden brown.
    - Add the grated coconut, chopped cilantro, poppy seeds, fennel seeds, coriander seeds, cumin seeds, and dried red chilies. Sauté for another 2-3 minutes until fragrant.
    - Allow the mixture to cool, then blend it into a smooth paste using a little water if needed.
    2. Prepare the curry:
    - Heat 2 tablespoons of oil in a large pan or pot over medium heat. Add the mustard seeds and let them splutter.
    - Add the cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté for a few seconds until fragrant.
    - Add the finely chopped onion and sauté until golden brown.
    - Add the turmeric powder, red chili powder, coriander powder, and garam masala. Sauté for a minute.
    - Add the prepared masala paste and sauté for 5-6 minutes until the oil separates from the masala.
    - Add 2 cups of water and salt to taste. Bring the curry to a boil, then reduce the heat and let it simmer for 10-15 minutes until it thickens to your desired consistency.
    3. Serve:
    - Garnish the salna with fresh cilantro.
    - Serve hot with parotta, biryani, or rice.
