    Just made this for dinner and wow it was incredible. There are no words to explain just how good this was, and the recipe was easy to follow and put together. The best dish i have made in a long LONG time. My boyfriend had 4 portions !

      This is the traditional way it's made in the uk with B sauce.

      I noticed that. Also noticed his beautiful cutting board (complete with bark) and that amazing trivet. The kitchen is beautiful, as is the chef. He's convinced me to go vegan.

    UPDATE: Really phenomenally delicious! The cheesy aspect of this is very convincing. My kids and husband devoured it! I made no changes. Not much else to say except MAKE THIS!

      Thank you!! I will try this out this week. We are not vegan but want to be but are the pickiest basic eaters on earth. I have never tried egg plant, mushrooms, fresh celery, etc...

      @@kileycanady1427 I used the Daiya Vegan Cheddar Slices (new and improved taste and texture). It is amazing! I just bunched it up and shredded it. One cup is all, but 3 slices 😊

    Hey Gaz! I'm Italian and I made this tonight, swapped the mince for lentils and dried mushrooms, and I used oatmilk for the besciamelle... Wow, my dad asked for a second portion and he is totally not a fan of vegan swaps! This is definetely going to become a staple of mine to impress non vegan guests... Thank you!!! Love your videos you're one of my biggest vegan inspirations.

      Actually I only added 2 tablespoons of nutritional yeast when the sauce was done, no vegan cheese involved. It crisped up nonetheless!

    I've been vegan for 4 years and wow, your lasagna just blew my mind. I'm Italian, from nearby Bologna, where lasagna originally comes from, and I can tell you that yours looks just like the one my grannies make! I'm so going to give it a try soon, when it's more wintery. You're truly talented Gaz, keep it up!

    I've found that brown lentils work well as a great alternative to meat or meat substitutes. They're quite peppery too so add a lovely texture and taste 💕

      What about tvp (textured vegetable protein)? Ive not tried it yet but from vegetarian cooking videos I watch I hear this is a good alternative to meat

    You've got to season at every stage in order to let the salt brake (by osmosis) into the cells of the ingredients. Since it's a long process the earlier the better. Heat also helps speeding it up!

      Thanks for the explanation, however, aren't you afraid to use way too much salt? Especially in this recipy, most of the times in pre-prepared vegan meats there is a lot of salt already. Do you know if there is an alternative for this, or just not adding it?

      Thijs van Esch The oldest trick ever is your solution. Taste before adding salt, or even after if you think it has enough by itself. You never taste too much when cooking.

      Inaccurate, osmosis is the movement of water down a concentration gradient. Salt allows water to move out of cells. It doesn’t break into cells.

    Made this for Christmas and it was a HIT! I used mushrooms diced extremely thin to stretch 1 pack of impossible meat. It was soooo good! I came back today to make it again lol this will be a staple.

    In case anyone is wondering, yes the béchamel works with gluten free flour. I used bobs red mill 1-1 and it tasted great 😍

      I think alot of American vegans use tofu, for the "ricotta" substitute, but in the UK most lasagna I've ever had only had the bechamel.

    i swear to god no one gets more butt-hurt about making traditionally non-vegan foods into vegan versions than Italians. like i've never found a vegan carbonara recipe that wasn't riddled with people complaining that it "wasn't real carbonara!" yeah... that's the point... it's vegan....

    I made this the night before last exactly as called for EXCEPT using mushroom mince in place of the vegan mince (which would be BEYOND crumbles stateside). I used a vegan boulonnaise recipe using mushrooms on line and adapted it for the vegan mince. It required preparing a day advance to slow-cook the mushrooms. I found a mandolin slicer saved time on slicing. Overall, the lasagna was very tasty and silky-textured. I recommend using a baking pan at least three or more inches deep.

    Made this lasagna yesterday for me and my kids and OMG, it was incredibly delicious. Made a whole deep lasagna pan and we only had 3 pieces left for today. My kids aren't even vegan and they couldn't believe how good it was. Sounds like my kids might be making a lifestyle switch. Incredible recipe! Thank you!

    One of the few times I’ve made a recipe I saw online and it came out PERFECTLY. I was SHOCKED by how good it tasted. I hadn’t made a lasagna in years, and never a vegan one. This was INSANE. 10/10

    I just made this tonight and it was INCREDIBLE. My absolute favorite lasagne recipe I’ve ever made 😊 I’m so happy to finally have a recipe that doesn’t rely on tofu ricotta and processed vegan cheese (nothing wrong with those, just not my favorite). I left the cheese out of the béchamel and loaded it with nooch. My non-vegan husband devoured it 😊 I’m already excited to eat the leftovers!

    Gaz, I just made your recipe and eating it now. It is amazing! My mother’s side is Italian, and I grew up on meat lasagna. Your recipe may be your interpretation, but it is a darn good one. There are extra flavors with the vegetables, but it has some of those classic meat and cheesy flavors I miss. Just remember that haters are going to hate. Personally, this Italian is going to keep using your recipes!

    I made this a couple of days ago. It turned out AMAZING.
    I haven't eaten a lasagna since I went vegan, and I struggled to find a decent recipe. I decided to give this one a try, and OH MY, It was incredible. Tbh I think about it almost every day and how good it was!! Thank you for sharing it with us. (even my flatmate that's not vegan loved it)

    I'm Italian and I feel like apologizing my self! Italians sometimes live in the past and are really proud of the Italian cuisine so they will try to hate anything that doesn't correspond to the original recipe. Of course the vegan version is not going to be exactly like the traditional one for obvious reasons. Sometimes people are ignorant and just can't make a change.
    Italians...move on!

    I’m learning so much. Mostly what a courgette and an aubergine are. We call them zucchini and eggplant in Canada. But courgette and aubergine sound good too. Nice recipe - lasagna is bomb.

      Courgettes and aubergines actually the French names if those vegetables. Since I learned english through American tv shows I learned zucchini and eggplant as well. I only learned recently that the brits uses the French words which I'm not gonna lie makes things so much easier for me :)

    I've tried making lasagnes many time but they always end up quite badly, so I gave up on them. When I saw this video I decided to give them one more try and I followed the recipe step by step. It was so much worth it. I finally made, not a good lasagne, but a delicious one. Thank you so much for your content, Gaz.

    i decided to go vegan not that long ago and I was so sad about not being able to eat my favourite dish anymore! so the first thing I did was look for a vegan lasagne recipe and found this.       Not being able to eat your favourite dishes is the hardest part about going vegan. I am currently transitioning into becoming vegan and for me giving up cheese is more difficult than giving up meat. I am so happy that vegan cheeses exist.

When I tried soy milk when I first went vegan, I hated it. But then I decided to try it after few months again. And I loved it. The one thing about being vegan is, your taste buds do change.

Respond with anything specific you’re missing and either myself or someone here will likely know a supplier or a way to make anything you can think of. Crispy duck was one of mine until I discovered Linda McCarney’s vegan duck.

    No need to leave it in the fridge! Just let it rest for 20 minutes after removing from the oven, and you get a nice set--but still supple--slice. This lasagna is a thing of beauty, and your little tips throughout the process are helpful. Too hot here right now for this hearty a dish, but I will definitely try it one of the first cool days of Fall. TFP!

    Tried this out tonight. Turned out amazing. I didn't use the zucchini or eggplant because I didn't have any, instead used capsicum, mushrooms and carrots. First time also for me to attempt vegan bechamel and boy did it turn out creamy and cheesy and so delicious.. Gaz, many thanks for always delivering the goods!

    Made Gaz's lasagna a couple nights ago. Truely amazing. The cheesy sauce is so silky and creamy, we made enough sauce for the next meal. It became alfredo sauce for the quinoa pasta dinner last night. Gaz, you're a genius in the kitchen! Thank you for sharing your expertise.

    I've made this twice now! The second time I made some of my own edits to the recipe (sorry gaz!) and it is EPIC. My edits in case you do want to know :)
    - cut out balsamic vinegar ( I don't like the taste in general so i just didn't like it in the meal)
    - Sizes of stuff:
    - - 2 x 375 gram bags of mince,
    - - whole eggplant not half
    - - 5 cloves of garlic at the start, 2-3 more later (love garlic and I think here it's not as strong as in some countries)
    - - 3 cans of chopped tomatoes not 2, 2 made it too dry and not tomatoey enough
    - lots more salt and pepper than the first time, salt in the bechamel sauce also.
    - 1 x crumbled veg stock cube into ragu
    - a pinch of smoked paprika in ragu,
    - and being very careful with the puree - first time I put too much and I think it tasted like pizza sauce.
    - bit of butter into the ragu
    - put nutritional yeast into bechamel
    - cooking the ragu a lot longer - like at least 30 min after tomatoes and mince lol! First time i was in a rush...

    I am not vegan, but I really enjoy vegan mince and I use it quite a lot. I can suggest to try adding marmite/vegemite (or any brand that makes similar product) to the ragú. It gives a very good "meat-y" flavour when caramelized! I am italian and I can say that my family approves too :)

    Made this for Christmas. Absolutely phenomenal. Loved by non-vegans, too.
    Used a package of beyond beef and a package of beyond meatballs. It slightly resembled Greek pastitsio because of that delicious bechamel!
    Will be making this recipe again and again!

    I made this a couple of days ago, more or less following the recipe, adding a bit of extra veg (whatever was left in the fridge).
    It's incredible.
    This recipe is amazing. You would never guess that its vegan. The béchamel is mad.
    I'm vegetarian, trying out veganism for a few months and my flatmates are meat eaters. They had a portion of the lasagne and said that they could eat it everyday and didn't miss the meat, cheese or milk.
    Thanks man! Its recipes like this that make a plant based diet seem equally as delicious, easy and creative, not at the expense of animals.

    A note on the tin for recycling...whether discarding or recycling a tin, always crush the top closed. It prevents scavenging animals from getting their heads trapped and dying a horrible death. Here in our part of South Africa we have donkeys that peruse the garbage too. They sometimes get a tin stuck on a hoof which cuts into their foot.

    I just made a bechamel sauce that was similar to a mix of this one and another vegan TH-camr's recipe. It was the first time I made vegan lasagna, or any lasagna. It was also the first time I used a bechamel sauce, it was so good on the lasagna! I don't really care for straight up vegan cheese most of the time, so this was perfect! I didn't use a recipe for my sauce and vegan meat, I just did it to taste. I also made the lasagna noodles from scratch for the first time with my new machine. I'm not fully vegan, but I've been really into these types of vegan TH-cam channels and trying to make vegan dishes whenever possible. I normally don't even cook, but it's been fun trying to make vegan versions of classics like lasagna and Mac and cheese (I highly recommend Tabitha Brown's recipe cuz it's so good!)

      This comment is coming from an Italian person (yes, I saw this video many months after it was released) that's approaching vegan diet.
      I can say I'm not a typical Italian if for typical Italian you necessarily think about those Italian cuisine traditionalists that always complain about recipes not being right. However, who decides what's a typical Italian? I most certainly love my country's traditions but I'm 100% aware that cooking involves fantasy and creativity so I am fine with a vegetarian carbonara and vegan lasagne (it's plural - lasagne, not lasagna. I'm most concerned about the wrong use of the grammar than about the ingredients list). The thing is: it's very useful to call them that way because people recognize those names so of course if you make pasta with, let's say, tempeh instead of bacon (guanciale), with a egg substitute and nutritional yeast instead of pecorino cheese that is not a pasta alla carbonara, but that's the whole point: it's a vegan version of the least vegan Italian pasta dish so of course you have to swap everything. That makes perfect sense and if you're trying to recreate the same flavors and textures of the original recipe you might as well just call it carbonara. I think it's more a matter of nomenclature than anything else. Is it a carbonara if it doesnt have the only 3 ingredients that carbonara requires? No. Is it important that we call it differently if the aim is to recreate that dish in a vegan version? No.
      So people should just chill. All people I mean. Italian fanatics and whoever complains about them.
      I also want to point out that lasagne is the type of pasta not necessarily the ingredients you put in and we make all sorts of lasagne. Ever tried with pumpkin and mushrooms? Or with radicchio? Or with pesto? (Just naming a few that can easily be "veganized" but there's many more). So yeah.. nomenclature

    I just made this lasagna and it blew my mind. I served it to my mother-in-law who said said “oh well, there’s cheese in here, though.” Nope! The cheese sauce (I made with almond milk and it is still good) is absolutely amazing and the the filling is so light and filled with veggies.     Made this for a friend's birthday a couple days ago and it was absolutely delicious! Was even better after it sat in the fridge overnight. Having said that, for anyone looking to make this I would suggest reading the recipe _and_ watching the video. Admittedly, this was my first time making lasagna of any kind (vegan or not), so some of the hiccups were on me, but I feel like there was some disconnect between the written and filmed versions. In any case, I think this would be great for non-vegans as well because it resembles traditional lasagna so impressively.

    I just made this. Might be my first official vegan dish. And wow... veganism suddenly seem atteignable. This is delicious ! The day after I found this video, I stumbled upon your book in my local library. No doubt now: I’m going to try more of your recipes! Thank you for sharing.

    Saw this recipe over a year ago and been wanting to make it but never found the zeal..until tonight..omg....that bechamel sauce is lifeee and that tip about season at every stage made a huggggge difference. Thanks Gaz.

    It is now laying in the oven. Can't wait to get it out ☺️. If you are noob in kitchen like me, watch out when you pour the milk into the flour with butter, once a piece of onion comes out of the pot, it is gonna sprinkle all over the place 😅 pour in gently

    I just discovered your channel and I'm in love. I went shopping straight away and cooked this lasagne for my non vegan flatmate and me (vegan). And let me tell you...it was sooo good. He couldn't get enough of it. Me as well of course. Thank you for your passion and help.

    Just made this. Was SO good. Followed recipe except added extra garlic (physically incapable of using just just 3 cloves of garlic in any recipe). Just went vegan this month thanku for the inspiration 💚

    I just made this, it was so so so good! I didn't add any vegan cheese to the bechamel, but a few tbs of miso paste instead. It was an awesome alternative to get that umami going 😋😍 Imma need to do it again soon, I loved it!
