If you do the impression first and then cut the cookie it won’t get distorted. Also if the dough is nice and chilled it’ll hold its shape better. Also I’ve learned on the software if you use the rotate tool it rotates more accurate. Can’t wait to see more Alta videos.

PLA and ABS filaments are NOT food safe plastics. You can buy Polypropylene filament that is food safe, but none of them are dishwasher safe. Cleaning them by hand cannot guarantee a sterile cutter due to the layer line ridges. This technique is great for playdough, but I would be cautious with consumables.
Thats why I tell people to put cling wrap over the cookie cutter when pressing into the dough. Other then that you are correct about only buying food safe material!

to get the dough to release - spray the cutter with Pam and dip it in flour before cutting chilled or frozen dough.
